Pav Bhaji Mumbai Style

Pav Bhaji is a Maharashtrian fast food dish that originated in Mumbai. This dish was originally created by a vendor for the mill workers who had very little time to have their lunch. Pav in Marathi means a small loaf of bread and Bhaji means a vegetable dish. I am very lucky to have a Maharashtrian friend who made this bhaji for a get together. I fell in so much love with it, the first thing I did was to get the recipe from her and tried it and the bhaji came out fabulous.

It is a healthy one pot meal, which nobody should miss. Here’s the Mumbai style bhaji with step by step photos…

Ingredients

Potatoes
3 medium sized cut to cubes
Cauliflower
2 cups
Carrots
3 cut to cubes
Peas
½ cup
Beans
½ cup
Capsicum/bell pepper
1 finely chopped
Onions
2 finely chopped
Green chillies
1 finely chopped
Tomatoes
6 nos  pureed in mixer or very finely chopped
Lemon
1
Ginger & Garlic paste
1 tsp
Asafoetida
1 pinch
Red chilli powder
2 tsp
Pav Bhaji Masala powder(Badshah)
3 tbsp
Turmeric powder
¼ tsp
Cumin powder
¼ tsp
Butter
2 tbsp
Cilantro
1 tbsp finely chopped
Salt
As needed
           
Method

In a pressure cooker add potatoes, cauliflower, carrots, peas and beans. Add enough water and cook for two whistles. After the steam releases mash them with a masher and keep it aside.


In heavy bottomed sauce pan add the butter, when it starts to melt add the asafoetida followed by onions and sauté them until translucent. Now add the ginger & garlic paste and green chillies and sauté until the raw smell goes off. Add the capsicum and sauté real good. Close the lid and cook for about 5 min until really done as shown in the photo.


Now add the pureed tomatoes to it and let it boil for about 5 min. Now add the red chilli powder, pav bhaji masala powder, turmeric powder, salt and cumin powder and mix it really well and cook for 3 min for the raw smell to go off. Now add the mashed vegetables in the cooker to the sauce pan and mix really well.


Now squeeze the lemon juice to the vegetables and stir it. Now check for salt and adjust the lemon juice according to your taste. Finally add little butter, chopped cilantro and turn off the stove.


For the pavs

Heat tawa in the stove, add little butter, ¼ tsp of pav bhaji masala powder and mix well. Toast the pavs in the tawa and serve it hot with bhaji.

Yummy and mouth watering pav bhaji is ready to be enjoyed.

Note:
If you are really conscious about the butter, you can use a mixture of oil and butter or just oil. But this dish when made with butter tastes great.
