Quick Pressure Cooker Vegetable Biryani/Vegetable Biryani Recipe

Vegetable Biryani’s can be made in different ways, like layering, in rice cooker or vegetable dum biryani. This is the easiest and simplest version of vegetable biryani made in no time. It is a perfect and healthy one pot meal for all types of occasions, and especially very useful when packing lunch for kids or your husbands.

Here’s how to make it with step by step photos…

Ingredients
Basmati rice
2 cups
Onion
2 cut to cubes
Tomatoes
3 finely chopped
Green chillies
4 slit length wise
Ginger & Garlic paste
2 tsp
Red chilli powder
1 tsp
Coriander powder
2 tsp
Turmeric powder
¼ tsp
½ tsp
Yogurt/curd
3 tbsp
Oil +  Ghee
3 tbsp
Salt
As needed
Mint/Pudina leaves
One handful (cleaned & washed)
Coriander leaves
One handful (cleaned & washed)
Mixed vegetables
2 cups

Mixed vegetables – carrots, beans, cauliflower, peas and potatoes (add any other vegetable you wish to)

For Tempering
Cinnamon
2 sticks (1 inch each)
Cloves
3
Cardamom
2
Fennel seeds
1 tsp
Bay leaves
2
Cashew nuts
6 -10
Preparation Time: 10-15 minutes
Cooking Time: 30-40 minutes

Method

Wash and soak the basmati rice for 20 min, drain and keep it aside.

Cut the beans, carrots and potatoes length wise. Wash the cauliflower florets and soak in hot water with salt for 5 min. Drain the water and keep it aside.

In a pressure cooker heat oil and ghee together, add all the ingredients mentioned for tempering above and sauté until nice aroma comes out.


Add the onions, green chillies and sauté until translucent; now add the ginger & garlic paste and sauté until the raw smell vanishes. Now add the tomatoes and sauté until mushy. Add the mint leaves and sauté for 2 min.


Add all the vegetables and mix well. Add the red chilli powder, coriander powder, cumin powder, turmeric powder and give a good stir and sauté for about 3 -4 min. Now add 3 cups of water, yogurt, salt and let it boil real good.


Add the basmati rice, coriander leaves and close the pressure cooker lid and cook for 2 whistles.

Finally open the lid after the steam releases, gently give a good stir and garnish with fried onions or coriander leaves.

Yummy, healthy and delicious vegetable biryani is ready to be enjoyed, serve it hot with any raita.

  2. I have noticed that pressure cooking is quite popular. I seldom use that method though I have a pressure cooker. Suppose its good for fluffing and super fast, also saving on gas or electricity. Nice flavors and such a biryani is always welcomed by us.

  20. I tried this biryani..it came out very well, i leave 2 whistles and took the cooker out of the stove,but the rice was burnt at the bottom...wat can I do for that?

    1. Thanks for trying the biryani. Cook the biryani in medium flame, did u soak the rice. Soak at least for 10 min. The cooker should be indalium not stainless steel.

      If u don't want to keep whistle, cook without whistle in medium flame for 12 to 13 minutes. It works wonders. The rice does not stick to each other later also.

      The burning happens if you sometimes wash the cooker with metal scrub and if you had sauteed the tomatoes for very long time.

      Anyway Veena, try it out next time it will come out good.

    I am visiting your blog for the first time and this biryani recipe looked very tempting. Is it okay to add the yoghurt in the middle stage of cooking? Will it not separate like milk?

      Thanks for stopping by, it is totally fine to add yogurt half way through, nothing will happen it will be fine and will balance the taste in the biryani
