I used 1 kg of tomatoes which yields about 450 gm of tomato thokku, I have reduced the measurements here for convenience.

Method

Wash the tomatoes and cut them and grind it in the mixer along with the tamarind. Transfer it to a bowl and keep it aside.

In a kadai heat one tsp of oil, add the fenugreek seeds and roast it until it turns color. After it cools make it in to a powder and keep it aside.

In the same kadai heat the oil, add mustard seeds after it splutters add the urad dal, curry leaves and sauté until the dal turns golden brown color.

Add the ground tomato paste and let it boil, do not add water. After it comes to boil add the red chilli powder, coriander powder, cumin powder, turmeric powder, salt and stir it really well.

Now let it cook in low flame, cook covered and stir in between. Add the jaggery powder and fenugreek powder and stir it really well.

After some time it will attain a thick consistency, add one tsp of gingelly oil and switch off the stove.

After it cools, transfer it to a clean airtight container and it can be stored up to 15 to 20 days in the refrigerator.

Suggestions:

  • I use only gingelly oil for the thokku, which gives a wonderful and delightful taste. And also you get all the health benefits of gingelly oil.
  • Always use only clean spoon to get the thooku, if wet spoon is used the tomato thokku will get spoilt.
  • You can very well adjust the amount of red chilli powder according to your taste.

Yummy and delicious tomato thokku is ready, it can be served with idli’s, dosa, chapatti’s or even with white rice. Spread the thokku on a bread for a simple and delightful sandwich.
