Kezhvaragu Koozh/Ragi Koozh/Finger Millet Porridge/Kezhvaragu Koozh Recipw with step by step photos

Kezhvaragu Koozh is a traditional Tamil Nadu dish which is an excellent cooler and nutritious one pot meal. This koozh is especially prepared in the month of “Aadi” for Amman and distributed to everybody in all the Amman temples and houses. In my mother’s house we prepare rice kanji for Amman, but in my in-laws it has been a tradition to prepare koozh for Amman. My MIL prepares koozh, mochai kottai kara kuzhambu, drumsticks leaves poriyal, Pidi kozhukkatai  and offer it to Amman in the month of “Aadi” and we all do special prayers and distribute it to everybody. Though I was not used to koozh, but after my marriage I have fallen in love with this healthy koozh. So this is my MIL’ s special Amman Koozh...

Here’s how to make Kezhvaragu Koozh with step by step photos…

Ingredients
Ragi flour/finger millet flour
1 cup
Raw rice or Noi[broken rice]
¼ cup
Yogurt
1 cup
Salt
As needed
Onions
1 finely chopped
Green chillies
optional

Method
In a bowl, add ragi flour, salt and enough water to form a batter (dosa batter consistency). Ferment this batter overnight in a warm place and keep it aside.


Blend the washed raw rice in blender until it is broken well. If you have “Noi” you can use that, it is available is shops. Since I did not have noi I used the broken raw rice.


In a heavy bottomed vessel add about 2 cups of water and let it boil. Add the broken rice and cook until it is soft.


Add the fermented ragi batter to the rice with another cup of water, now cook the porridge in medium flame by stirring continuously.


You can check if the koozh is cooked by touching koozh with wet fingers, if it does not stick in the fingers then it is done. Now switch off the stove and cool it.


Add yogurt to it when ever needed and serve it with onions and green chillies.


Suggestions
Use sambar vengayam when you serve it gives additional taste and green chillies are optional.
Koozh and mochai kottai kuzhambu are made for each other, they taste simply fabulous. You can also serve koozh with any other kaara kuzhambu.

    1. I dont think so sis, traditionally it is made by adding noi and it gives added taste and texture to the koozh...
