This is my mom’s special chicken pepper fry. As the name says it has black pepper & other masalas ground separately and cooked with the chicken to give a heavenly taste. Just try it out guys and you will surely fall in love  this chicken pepper fry.

So here’s how to make Chicken Pepper Fry with step by step photos…

Ingredients

Chicken
500 gm
Onion
2 [finely chopped]
Tomato
1 [finely chopped]
Ginger & Garlic Paste
2 tbsp
Red chilli powder
1 tsp
Coriander powder
2 tsp
Turmeric powder
1 tsp
Salt
As needed
Coriander leaves
2 tbsp finely chopped
Curry leaves
10-12
Gingelly Oil
2 tbsp
Lemon
For garnishing

For Roasting & Grinding

Black Pepper Corns
1 ½ tbsp
Cumin Seeds
2 tsp
Fennel Seeds
2 tsp
Cinnamon
1 inch piece
Cloves
2
Cardamom
1

Method

Clean, cut and wash the chicken. Add ½ tsp of turmeric powder to the chicken and wash it nicely to get rid of the smell. I have used chicken with bone but you can also use boneless chicken.

Dry roast and grind the ingredients mentioned above to fine powder and keep it for later use.

Heat oil in a kadai, add onions and sauté until golden brown, now add the ginger & garlic paste and saute until raw smell vanishes.

Add the chicken and saute for about 4-5 minutes. Now add the red chilli powder, coriander powder, turmeric powder, salt and mix really well.

Add ¼ cup of water, chopped tomatoes to the chicken, cover and cook the chicken until done.

When the chicken is cooked add the ground masala powder and fry the chicken well until all the masala is infused well in to the chicken.

If needed add some oil and fry the chicken. Finally add the curry leaves, coriander leaves and mix well.

Serve it hot with a wedge of lemon size, perfect country style chicken pepper fry is ready to be enjoyed.
