Aloo Gobi Masala/Potato & Cauliflower Masala

Yesterday I posted a delectable and a very tasty squid masala, today I have a heavenly tasting North Indian cuisine Aloo Gobi Masala. This Aloo Gobi masala is very simple, yet the awesome combination of potatoes and cauliflower along with Indian spices is unbeatable. Here’s how to make Aloo Gobi/Potato & Cauliflower Masala with step by step photos…


Ingredients

Aloo/Potatoes
3 cut to bite size pieces
Gobi/Cauliflower
1 medium, cut to size pieces
Cumin seeds
1 tsp
Onion
1 finely chopped
Tomatoes
2 finely chopped
Green chilli
1 finely chopped
Ginger & Garlic paste
2 tsp
Red chilli powder
1  tsp
Coriander powder
2 tsp
Turmeric powder
½ tsp
Cumin powder
1 tsp
Garam masala powder
1 tsp
Amchur /Dry mango powder
½ tsp
Asafoetida/Perungayam
One pinch
Oil
2 tbsp
Salt
As needed
Cilantro
1 tbsp for garnishing
Serves: 4-6 persons
Prep Time: 15 min
Cooking Time: 20 min

Preparation:

Wash, peel and cut the potatoes to bite size pieces. In a microwave safe bowl cook the potatoes with ½ cup of water for 3-5 mins in a microwave.

Cut the cauliflower to florets.
Heat water in a sauce pan with salt, switch off the stove add the cauliflower florets close it and keep it for 3 to 5 min. Then drain the water and keep the florets aside.

Method

Heat oil in a kadai, add the cumin seeds and let it splutter.


Add the onions, green chillies and saute until they turn golden brown. Now add the ginger & garlic paste and cook until the raw smell vanishes.


Add the tomatoes cook until they turn mushy.


Now add red chilli powder, coriander powder, turmeric powder, amchur powder, cumin powder, garam masala powder, asafoetida  and saute well until oil starts to separate out.


Add the half cooked potatoes and mix well so that the masala coats evenly on all the potato pieces. Cover and cook the potatoes for 5 min, make sure the potatoes do not become mushy.

Now add the cauliflower, sprinkle little water and mix them well. Cover and cook the cauliflower until tender and not mushy.

Finally add the chopped cilantro and serve hot with any flat Indian bread or just with plain white rice.


Suggestions:
  • I have half cooked the potatoes in the microwave, you can instead cook them in the masala in the stove by sprinkling some water.
  • Always cook the potatoes and then add the cauliflower, because cauliflowers cook really fast.
  • You can add peas also to this masala, but I have not added them here.
  • If you do not have amchur powder, you can replace it with lemon juice. Add about 1 tsp of lemon juice towards the end of cooking and toss it around.


Super delicious Aloo Gobi/Potato & Cauliflower Masala is ready to be enjoyed.
