Chicken Fajita Recipe– Mexican Delight/Chicken Fajita/How to make Chicken Fajita with sep by step photos

Yesterday I posted a very easy and a quick Mexican/Spanish rice. Today I am posting another Mexican delight – Chicken Fajita[Pronounced as fahHEEtah]. Fajita is a Mexican term or Tex –Mex for little meat (chicken/beef) strips, grilled and served with mexican rice, onions, bell peppers, sour cream, slasa and guacamole. The chicken/meat fajita is served sizzling hot in an iron skillet to our table in restaurants. The sizzling sound, hot steam and wonderful aroma will just want us to complete the whole skillet. Here’s how to make Chicken Fajita with step by step photos…
Ingredients
Chicken Breast Pieces
½ kg
Onion
2 [thinly sliced]
Green bell pepper
1 [thinly sliced]
Red bell pepper
1 [thinly sliced]
Oil
2 tsp

For Marinating the Chicken
Lemon juice
From 1 lemon
Oregano [dried]
1 tsp
Red chilli powder
3 tsp
*Coriander powder [optional]
2 tsp
Cumin powder
1 tsp
Black pepper powder
½ tsp
Salt
As needed
Oil
2 tsp
*The original recipe does not call for coriander powder, but I added to give it more flavour and taste.

Preparation
Clean wash and cut the chicken pieces to strips as shown in the photo.


Wash and cut the onions, green bell pepper, red bell pepper to thin strips.

Method

In a big bowl add all the ingredients mentioned for marinating and mix it really well.


Now add the chicken pieces and toss it around, so that the masala is coated all over the chicken.

Wrap it with cling flim and refrigerate the chicken for at least 1 hour.

Heat 2 tsp of oil in a grill pan or kadai and add the marinated chicken pieces. Let the chicken cook for about 6-8 min or until tender.


Now the chicken is cooked.

Now add the onions, red bell pepper, green bell pepper and toss it around for about 3 min. The vegetables should turn little tender, but should be crunchy as well.


Note:
  • I have used 3 tsp of red chilli powder, you can adjust the spice according to your taste. The actually recipe calls for only 1 tsp of red chilli powder.
  • Usually the chicken is grilled, but I just used the regular pan. If you have a grill pan you can use that as well to cook the chicken.

  20. Hi Priya. I am big fan of your cooking. I check out every recipe you post while I may not always be able to comment.

    I am venturing into learning to cook chicken recipes. I want to know that, in this recipe when you add the marinated chicken to the oil, at what flame do you cook it. I mean high, medium or low? On an average how much time do the bite size pieces need to be cooked? Also do let me know the same in case of your other recipes like Chicken Podimas and Managalore chicken ghee roast. I once tried cooking a chicken recipe on medium flame but the chicken didn't turn out to be as juicy.

    So plz guide me with the temperature and the cooking time. Thanks :)

    1. Hi Manju, I am so happy you like my dishes and so excited dear about that.
      As far as the chicken is concerned, I cook the chicken in medium flame only, never on high. One important thing after adding the chicken in any dish you have to saute them until the chicken turns color from pink to white. Usually bite size pieces cook in 7-8 minutes. With Mangalore chicken ghee roast, the chicken has to be coated with masala and ghee so the last 2 -3 minutes fry it in medium high heat and then switch off the case. Always covering and cooking the chicken helps in keeping them moist. I think Manju I have answered your questions. Thank you once again for contacting me....
