Thengai Burfi/Coconut Burfi/Nariyal Burfi – Diwali Special

Hello friends,

Belated Diwali Wishes from Priyas Virundhu to you and your family members. For this Diwali I chose to make a traditional, easy and quick sweet – Thengai Burfi. The best part, I love about coconut burfi is it can be made with less number of ingredients in minimal time. Coconut Burfi is a perfect sweet for any festive occasion, so try out this delectable coconut burfi and have a great day.

Here’s Thengai/Coconut Burfi with step by step photos…


Ingredients

Thengai/Coconut grated
2 cups
Sugar
1 ½ cup
Water
¼ cup
Ghee
2 tsp
Cardamom powder/Elachi powder
½ tsp
Preparation time: 10 minutes      
Cooking time: 20 minutes
Makes: 15 to 17 pieces

Method

Grease the plate with ghee and keep it aside.

Add sugar to a heavy bottomed pan, add water and mix thoroughly until the sugar dissolves.

Heat the sugar syrup in the stove until it starts to form bubbles.


Keep stirring the sugar syrup until it reaches single string consistency. [Check the single string consistency by taking a drop of sugar syrup between your thumb and index finger, you will see a single string formed.

Now add the grated coconut and stir continuously. It will start to form bubbles and will blend together really well.


Add the ghee and cardamom powder and mix well.


Stir till the coconut mixture looks thick. Now remove the coconut mixture from heat and pour it to the greased plate and flatten it evenly.

Wait for about 3-5 minutes and when it is still warm cut into squares or diamond shapes and let it cool.

After the burfis have cooled, transfer the burfis to airtight container and enjoy this delectable and mouth-watering coconut burfi.


Note:
  • Be careful when cooking the coconut in sugar syrup, when you keep it longer the sugar will start to caramelize and the burfis will become hard.
  • I have used freshly grated coconut, you can also use the grated coconut available in packets.
  • When scrapping the coconut, make sure you do not scrap the brown sides.
