Goat brain fry/Aatu Moolai varuval is a very simple, quick and delectable dish that can be made in minutes. This recipe is my mom’s special, that I have always enjoyed since my childhood. Goat brain is very soft and delicate, has a buttery taste. When it is marinated and cooked with fresh ground spices they taste heavenly and just melts in your mouth. Here’s how to make Goat Brain Fry with step by step photos…
Ingredients
Goat Brain/Aatu Moolai

Red chilli powder
1 ½ tbsp.
Coriander powder
2 tsp
Turmeric powder
½ tsp
Salt
As needed
Oil [Gingelly oil/Nallaennai]
2 tbsp

For Grinding
Black pepper
1 tsp
Cumin seeds/Jeeragam
1 tsp
Fennel seeds/Sombu
1 tsp
Garlic cloves
4
Ginger
2 inch piece
Onion
1 small chopped
Preparation time: 10 minutes                             Recipe Category: Side Dish

Method
Wash the goat brain thoroughly with water at least 3-4 times. Be careful when washing them, because they are very delicate.


Add red chilli powder, coriander powder, turmeric powder and salt to the brain and mix gently so that the masala is coated all over the brain and let it sit for 5-7 minutes.


Grind black pepper, cumin seeds, fennel seeds, garlic cloves and ginger in the mixer. See to that it is course and not a fine paste. Now add the onions and run the mixer for two times and switch it off.


Now add the ground paste to the brain, mix gently so that the paste is covered all over the brain. Let the marinated brain sit for another 10 minutes.


Heat oil in a pan [wide pan] on medium flame. When the pan is hot enough, add the brain along with the masala.


Let the brain cook on medium flame; flip the brain gently so that it cooks evenly on all the sides. Cook the brain for about 10 minutes or until well done as shown in the photo.


Delicious and mouth-watering Goat Brain Fry is ready to be enjoyed. You can serve this quick brain fry with simple Rasam rice or sambar rice.
