Dill Leaves Vadai Recipe/Dill leaves Kadalai Paruppu Vadai/Dill Leaves Paruppu Vadai Recipe/Dill Leaves Vadai with Channa Dal

Dill leaves vadai is a very aromatic, delicate tasting and flavourful vada. Before going into the recipe I would like to share a few things about Dill leaves. Dill is native to Mediterranean and East European regions. Dill leaves are feathery, fern like and dark green in colour. Fresh and dried dill leaves are widely used as herbs in Russia, Germany, Greece, Poland, Norway and many other countries. In India dill is known as shepu in Marathi, savaa in Hindi, soa in Punjabi, sadhakuppu in Tamil, soa-kura in Telugu, sabbasige soppu in Kannada and chathakuppa in Malayalam. Dill is a unique plant, because both its leaves and seeds are used as seasoning. It is rich in vitamin A, C, B6, folates, riboflavin, calcium, iron and other important minerals. Dill has an essential oil called Eugenol, which has been in therapeutic use as local anaesthetic and antiseptic. Eugenol also has been found to reduce sugar levels in diabetics. Dill seeds have been used in traditional medicines for digestion, as disinfectant, for more milk production in nursing mothers and to cure neurological symptoms like headaches and neural instability. Thayir vadai is yet another delectable and my favourite evening snack. I love it so much I can finish off one whole plate in no time. The best part of thayir/curd vadai is, though the vadai’s are fried in oil, as they are soaked in water for about a minute and when squeezing out the water all most all the oil also comes out of the vadai and they become very soft. All the goodness of yogurt/thayir, protein from urad dal, added vegetables makes this a delicious evening snack. Do check out other Vadai Varieties here and other starters/Appetizers/Evening Snacks here

Fish Cutlets/Fish Patties/Fish Cakes

We are always looking to make some snacks for the kids especially after school. To satisfy their taste buds and give them something interesting is always a challenge. Today I was running out of many groceries in my kitchen and was really lazy to go shopping. It is really cold and windy, most of the days I just don’t want to step out of the door. I just had some potatoes and tuna fish [cans], so ended up making cutlets. I have previously made fish cutlets from fresh fish. This is my first time using tuna fish from a can, I never buy canned fish. But I have so many friends using canned tuna, so I just wanted to try it once. We all liked it a lot, it was awesome.

Crostini with Cherry Tomatoes & Mozzarella/Crostini with Cherry Tomatoes & Mozzarella Cheese with step by step photos

For this month’s IFC challenge we are exploring the Campania cuisine of Italy chosen by Priya Suresh. Campania is a highly populated region in the Southern Italy, located on the Italian Peninsula with the Mediterranean Sea to the West.

Campania’s exuberant cuisine relies on sun-kissed vegetables and herbs, salty capers, dried pasta and fresh farmhouse cheeses, chief among them water buffalo’s Mozzarella. Campania is home to over 80% of Italy’s water buffaloes, so the Campani produce a number of delicious water buffalo’s milk cheeses. For this month’s IFC challenge I chose to do the Corstini with cherry tomatoes & mozzarella. Thanks a lot Mrs. Priya for the wonderful challenge.

Kara Sev/Easy Diwali Snacks

Kara Sev is a traditional South Indian snack prepared during Diwali and also during other times as crispy and crunchy evening snacks. “Kara Sev” means “Spicy Sev”, you can very well adjust the amount of spice according to your taste buds, but the measurements I have given here will suite all age groups. Kara sev is usually made with kara sev karandi (big ladle with holes), but since I don’t have one of those I have used the regular murukku press. Kara sev is made with besan flour, rice flour and other spices perfectly blended together. The addition of freshly ground black pepper corns gives extraordinary taste to these Kara sev.
