I am so happy to share with you all that today Priya’s Virundhu is celebrating First Blog Anniversary. This day last year I started this wonderful journey of blogging. It’s been a whole year and it is totally unbelievable as time flew really fast for me. The blogging world is really amazing and I am really happy to have come across so many wonderful, inspiring and loving bloggers. This virtual world has taught me so many things and I made lot of sweet friends. This journey of one year has been tremendous for me and I have successfully posted 352 posts. This is really a great achievement for me and it is all possible only because of your love and support.

Lemon Couscous – Indian Style/Lemon Couscous Recipe/How to make Lemon Couscous Recipe with step by step photos

Couscous is a traditional Berber [kind of food eaten in North Africa] dish of semolina which is cooked by steaming. It is traditionally served with meat or vegetables. Couscous is a staple food throughout the North African cuisines of Morocco, Algeria, Tunisia, Mauritania and Libya. The process of manufacturing couscous is labour-intensive. The semolina is sprinkled with water and rolled with the water and rolled with hands to form small pellets, sprinkled with dry flour to keep them separate and then sieved. Any pellets which are too small to be finished granules of couscous and fall through the sieve are again rolled and sprinkled with dry semolina and rolled into pellets. [Info source: Wikipedia]. These pellets are packed and sold in the shop as couscous. Here I have prepared the same couscous with Indian spices and lemon juice. Crostini with Cherry Tomatoes & Mozzarella/Crostini with Cherry Tomatoes & Mozzarella Cheese with step by step photos

For this month’s IFC challenge we are exploring the Campania cuisine of Italy chosen by Priya Suresh. Campania is a highly populated region in the Southern Italy, located on the Italian Peninsula with the Mediterranean Sea to the West.

Campania’s exuberant cuisine relies on sun-kissed vegetables and herbs, salty capers, dried pasta and fresh farmhouse cheeses, chief among them water buffalo’s Mozzarella. Campania is home to over 80% of Italy’s water buffaloes, so the Campani produce a number of delicious water buffalo’s milk cheeses. For this month’s IFC challenge I chose to do the Corstini with cherry tomatoes & mozzarella. Thanks a lot Mrs. Priya for the wonderful challenge.

Savoury Kugelhopf – Eggless

For this month’s IFC challenge we are exploring French cuisine chosen by Shobana. French cuisine is one of the most challenging vast cuisines of the world. In particular Alsace-Lorraine region is chosen for the challenge which inherits partly German and partly French Culture.

Alsace and Lorraine are separate regions in France’s North-Eastern corner, and share borders with Belgium, Luxembourg, Germany and Switzerland. Alsatian cuisine, is based on Germanic culinary traditions, is marked by the use of pork in various forms. Traditional dishes include baeckeoffe, tarte flambee, quiche lorraine, choucroute and fleischnacka. Southern Alsace, also called the Sundgau is characterized by carpe frite that also exists in Yidish tradition. Though there are many recipes to try from this region, we were asked to pick one from Tarte Flambee, Kugelhopf and Quiche Lorriane.


I chose to make Savoury Kugelhopf, which is soft yeasted cake. Kugelhopf is usually a sweet cake made with raisins, almonds etc but this Kugelhopf is a savoury bread filled with vegetables like onions, bell pepper, tomatoes and zuchhini.

This Honey Drizzled Semolina Cake is for the Home Baker’s Challenge started by Mrs.Priya Suresh and hosted by Mrs. Shama Nagarajan. Thank you very much Mrs. Priya Suresh and Mrs. Shama Nagarajan for this wonderful and exciting challenge.

This month Mrs. Shama had chosen  5 different types of  cakes and muffins. Off all the five recipes I chose to do the Honey drizzled Semolina Cake. This cake is called as Basbousa/Hareesa in Arabic, Revani in Turkish, it is nothing but a sweet cake made with semolina  and soaked in a simple syrup. The basbousa or the honey drizzeld semolina cake is found in the cuisines of Eastern Mediterranean under different names. [Source:Wikipedia]

This cake is very easy to make, it is really soft, moist and spongy. Once you start you can never stop eating them. Try it out guys you will surely fall in love with it. Usually nuts are placed on top of the cake as part of decoration on each piece of cake, which you can do it before serving. My kids were in a hurry for the cake so could not place almonds before the clicks, even my clicks were in a rush.

Chicken Fajita Recipe– Mexican Delight/Chicken Fajita/How to make Chicken Fajita with sep by step photos

Yesterday I posted a very easy and a quick Mexican/Spanish rice. Today I am posting another Mexican delight – Chicken Fajita[Pronounced as fahHEEtah]. Fajita is a Mexican term or Tex –Mex for little meat (chicken/beef) strips, grilled and served with mexican rice, onions, bell peppers, sour cream, slasa and guacamole. The chicken/meat fajita is served sizzling hot in an iron skillet to our table in restaurants. The sizzling sound, hot steam and wonderful aroma will just want us to complete the whole skillet. Mexican Rice/Spanish Rice - Method 1/Mexican Rice with step by step photos

I am very fond of Mexican food, may be because it is spicy and hot like the South Indian food. Living outside India I have got wonderful opportunities to try different cuisines in these past 10 years. Whenever I get a choice of cuisines, my first choice will be Mexican followed by Thai food, and then Italian.

Spanish rice is also known as Mexican rice is a very common side dish in Northern Mexico. In Mexico this rice dish is referred to as “Arroz” which translates to “rice”. In Northern Mexico the rice is cooked with chicken broth, tomato, onion and garlic, it is the Mexican way to flavor the rice. So the “Mexican Rice” is nothing but the rice is cooked in the Mexican style.  Today I made Mexican rice and Chicken Fajitas for lunch and chicken fajitas is coming up in my next post.

Today I was in no mood to do an elaborate cooking, so made a very quick and simple garlic and herbs penne pasta with parmesan cheese. Actually the name says it all; it can be made in no time with very less ingredients. I made this pasta and served them with fresh zucchini stir fry. It was an elegant and heavenly Italian lunch which just made our day. My kids love pasta and they got excited and finished them all.

Garlic & Parmesan Pull Apart Bread/Monkey Bread

I am happy to say that I am part of Home Bakers Challenge started by some of the fellow bloggers , initiated by Mrs. Priya Suresh and hosted by Mrs. Manjula of DesiFiesta . The objective of this challenge is to learn and bake together.A special thanks to  Mrs. Manjula and Mrs. Priya Suresh for this wonderful challenge.

Mrs. Manjula challenged 4 different breads Rainbow swirl bread, Monkey bread, Chocolate marble bread and Anadama bread. Of all these breads I chose the Monkey/Pull apart bread and did the savoury version of it. We all love it so much the bread was gone in no time as soon the bread was baked.

Though I don’t know why this bread gets its name, I found some info in Wikipedia that says “The origin of the term 'monkey bread' is uncertain. Possible etymologies include that the bread resembles the monkey puzzle tree. It consists of soft pieces of bread with cinnamon sprinkled on it. It is served at fairs and other parks as a treat.” Ok guys now all that said, let’s see how to make the monkey bread/pull apart bread
