I have been making different types of easy and quick paratha a lot lately, the hidden reason behind it is to pack lunch for my girls. This ajwain paratha is one such paratha. It is a flavourful and delicious paratha that can be made in no time and is a perfect lunch box recipe. Ajwain/Omam is very a common and a handy herb/seed in Indian households which helps in getting rid of stomach pain, indigestion and flatulence. Not only as a good digestive aid it has other health benefits as well. Ajwain is very useful in relieving sinus problems, cold and congestion. A quick tip, before going into the recipe, crush a few seeds of ajwain tie it in a soft cloth and heat the bundle over a warm tawa. Soya chunks/Textured Vegetable Protein (TVP) are defatted (fat removed) soy flour product, a by-product of extracting soybean oil (Wikipedia). I am back after my vacation, we had great time back in Chennai. I hope you all had great Christmas and wonderful New Year celebrations. Lemon Couscous – Indian Style/Lemon Couscous Recipe/How to make Lemon Couscous Recipe with step by step photos

Couscous is a traditional Berber [kind of food eaten in North Africa] dish of semolina which is cooked by steaming. It is traditionally served with meat or vegetables. Couscous is a staple food throughout the North African cuisines of Morocco, Algeria, Tunisia, Mauritania and Libya. The process of manufacturing couscous is labour-intensive. The semolina is sprinkled with water and rolled with the water and rolled with hands to form small pellets, sprinkled with dry flour to keep them separate and then sieved. Any pellets which are too small to be finished granules of couscous and fall through the sieve are again rolled and sprinkled with dry semolina and rolled into pellets. [Info source: Wikipedia]. These pellets are packed and sold in the shop as couscous. Here I have prepared the same couscous with Indian spices and lemon juice. Lemon Rice/Elumichai Sadham –South Indian Special

Lemon rice/Elumichai Sadam is a very common, traditional and authentic dish prepared in all most all South Indian homes. This heavenly tasting lemon rice is always paired with Potato Masala/Fry, it is like they are made for each other and is totally unbeatable. Lemon rice is a very simple and quick dish to prepare and comes in handy for lunch box. Not only just lunch box but also for travel, it does not get spoilt because of the lemon juice which acts as a natural preservative. Lemon rice is also prepared during special pooja days, Seemandhams and Valaikappus(Baby shower). In my earlier post I had mentioned about the valaikappus . In Valaikappu’s/Seemandham’s 5 or 7 or 9 different types of variety rice is prepared for the occasion and lemon rice plays a vital role in it. Usually Lemon rice is prepared with Potato Masala/Fry but today I prepared Spinach Pakoras and served it as side dish.

Simple Semiya/Vermicelli Upma/Semiya Upma Recipe/Vermicelli Upma Recipe with step by step photos

This is a very simple and quick semiya upma which takes about 15 – 20 min to cook. I have added tomatoes because I like the tangy taste of it and my kids also like it this way. You can very well replace tomatoes with lemon juice. This is a very simple version of semiya upma without vegetables, I make it when I am lazy to cut vegetables and when I am in a time crunch.
