Heat 3 tsp of oil/Gingelly oil in a pan/kadai.

Add 2-3 tsp of urad dal to the oil and saute well until it changes to golden brown color.

Add the dry red chillies and saute well for about a minute or until the color changes.

Now add garlic cloves and saute well for about a minute on medium flame.

At this stage add shallots/sambar vengayam, little salt to the pan and saute well until it changes to light golden color or for about 4-5 minutes.

Let it cool down completely.

Add it to the mixer and grind it to fine paste and transfer it to a bowl.

Heat 2 tsp of oil in a small pan, splutter mustard seeds, cumin seeds, then add urad dal and fry for 15 to 20 seconds, add curry leaves fry for another 15-20 seconds  and switch off the stove.
