Midhukku Vathal Kuzhambu/Vathakuzhambu with Midhukku Vathal

Midhukku Vathal is a very famous and popular vathal made in the district of Thirunelveli and Karaikudi in TamilNadu. Midhukku vathal is made from a small vegetable that belongs to cucumber family which looks similar to kovaikkai. It is called as wild melon in English.  It is very good to include midhukku vathal in our diet because it reduces bad cholesterol, improves digestion and liver function, it also reduces unwanted water retention and helps in de-worming. This vegetable is cut into small pieces, dried in sunlight and then soaked in curd overnight along with salt. During the day it is sun dried and soaked in remaining curd during night till it fully absorbs the curd and becomes crisp and dry. This dried vathal can be stored for about a year. This midhukku vathal can be deep fried in oil and had as side dish along with all rice varieties or can be added in kuzhambu to make vatha kuzhambu. Thiruvathirai Kootu is a special kootu made with country vegetables [Nattu Kaikarigal] during thiruvathirai festival and offered to Lord Shiva along with Thiruvathirai Kali and steam cooked white rice. This kootu is also prepared on Pongal and offered to Sun god along with Sakkarai Pongal, Ven Pongal and Paal Pongal. This kootu is made with a minimum of 7 different types of vegetables and increase the number up to 21, but always odd number of vegetables only must be used. Try to add as many as country vegetables which available abundantly during this season. Vendakkai Puli Kuzhambu is very popular spicy and tangy gravy served for lunch along with steam cooked white rice in South India. This puli kuzhambu is my favourite because it is made fresh ground masala paste, but if you are in a rush and running out of time, you can very well replace it with red chilli powder and coriander powder. Usually this vendakkai puli kuzhambu is done with shallots/sambar vengayam, but with sky rocketing prices of onions, I have used the regular onions to make the gravy. The bondas made out of urad dal, are soaked in water and then dropped into the more kuzhambu, which absorbs the spicy butter milk and is extremely soft, which in turn just melts in your mouth and taste heavenly. Manathakkali Vathal Kuzhambu/Sun Dried Black Nightshade Gravy

Vatha Kuzhambu/Vathal Kuzhambu is a very popular, traditional and authentic kuzhambu prepared in Tamil Nadu. This  gravy is prepared with tamarind along with vatha kuzhambu powder or sambar powder or even with just redchilli powder and coriander powder. The gravy is cooked until it thickens and then any vathal of your choice is added. Vatral/vathal are nothing but sun dried berries or vegetables. The most commonly made vathal kuzhambus are manathakkali vathal kuzhambu, sundakkai vathal kuzhambu, vendakkai vathal, kathrikkai vathal, kothavarangai vathal etc. Manathakkali is known as “Makoy” in Hindi and “Black Nightshade” in English.
