Carrot Beans Poriyal Recipe/Carrot Beans Stir Fry [With Coconut] Recipe/கேரட் பீன்ஸ் பொரியல்/Carrot Beans Poriyal with step by step photos & Video in English & Tamil

Carrot Beans Poriyal is a very common, simple, quick, healthy and delectable side dish prepared in all the South Indian homes. The final touch of coconut to this stir fry adds an extraordinary taste. Carrot beans poriyal is an excellent accompaniment with any South Indian meals, starting from sambar rice to curd rice, not just rice, roll them in rotis and enjoy it for lunch or dinner. Though I make this very often at home, I never thought of clicking any pics and posting it here. Any way friends thought it might be useful for some beginners and bachelors. Here’s how to make Carrot Beans Poriyal with step by step photos…
Ingredients
Carrots
200 gm
Beans
200 gm
Onion
1 finely chopped [optional]
Sambar powder
1 ½  tsp
Turmeric powder
¼ tsp
Grated coconut
3-4 tbsp
Salt
As needed

For Tempering
Oil
2 tsp
Mustard seeds/Kadugu
1 tsp
Cumin seeds/Jeeragam
½ tsp
Urad dal
1 tsp
Dry red chillies
1 [optional]
Curry leaves
5 -6

Method
Wash the carrots and beans thoroughly. Peel the skin of the carrots and chop them finely. Cut off the edges of the beans and cut them to fine pieces.


Heat oil in a kadai, splutter mustard seeds, now add cumin seeds, urad dal, dry red chillies, curry leaves and fry until the dal changes color.


Add the onions and saute until translucent.

Now add the chopped carrots and beans and saute for about 2 -3 minutes in medium flame.


Add the sambar powder, turmeric powder, salt and mix well. 


Sprinkle about ¼ cup of water, cover and cook the vegetables for approximately 4 -5 minutes.

The vegetables are perfectly cooked.


Finally add the grated coconut and mix well. Now switch off the stove.



Healthy and delicious carrot beans poriyal is ready.


Suggestions:
  • Addition of onions is optional, I add onions when I have some chopped onions left after cooking rest of my dishes.
  • I have added sambar powder, you can replace it with 3 -4 green chillies.
  • If you are packing the vegetables for lunch, stir the vegetables with coconut for about 2 minutes and then switch off the stove.
