Beans Paruppu Usili/Paruppu Usili with Beans – Tamil Brahmin Style

Beans Paruppu Usili is a traditional South Indian [Tamil Nadu] recipe made in all the Brahmin houses as a side dish for rice. Paruppu Usili is nothing but a dish prepared with lentils and vegetables. We can choose vegetables like vazhaipoo, avarakkai, cabbage, kothavarangai or even carrots along with the lentils. My husband loves to have Beans Paruppu Usili and I make it along with Vatha Kuzhambu, which always makes a great combo. Try out this healthy and delicious Beans Paruppu Usili and post your feedback. Here’s how to make Beans Paruppu Usili with step by step photos…


Ingredients

Beans/French Beans
1 ½ cup finely chopped
Toor Dal/Thuvaram Paruppu
1 cup
Dry Red Chillies
6-7
Asafoetida/Perungayam/Hing
¼ tsp
Turmeric Powder
1 tsp
Curry Leaves
8-10
Salt
As needed

For Tempering

Mustard Seeds/Kadugu
1 tsp
Cumin Seeds/Jeeragam
1 tsp
Urad Dal
1 tsp
Dry Red Chilli
1
Curry Leaves
6-8
Oil
3 tbsp
Preparation Time: 10-15 minutes           
Cooking Time: 20-25 minutes      
Serves: 4-5

Method

Wash the toor dal thoroughly with water 2-3 times. Now soak the dal for about 2 hours. After 2 hours drain the water and keep it aside.


Add the soaked dal, dry red chillies, salt, asafoetida, turmeric powder to mixer and grind it to a coarse paste.


Now you have to steam cook the ground dal paste in steam cooker or in idli cooker as shown in the photos for about 15 minutes or until completely cooked. If a tooth pick or needle inserted into the dal comes out clean then it is cooked completely. Switch off the stove.


Remove the dal patties from the idli plate and let it cool for few minutes. 



Now crumble it with your hands to make a coarse powder.  You can also run it in the blender for even texture of the dal.


Meanwhile wash and cut the ends of the beans. Now chop it finely and set it aside.

Cook the beans in salted boiling water for about 5-6 minutes. Drain the water and keep the cooked beans aside.


Heat oil in a kadai, splutter mustard seeds, then add cumin seeds, urad dal, dry red chilli, curry leaves and fry for few seconds.


Add the crumbled dal mixture, mix thoroughly and cook on medium flame for about 2-3 minutes.

Now add the cooked beans. 


Toss the beans and dal together on high heat for about two to three minutes and switch off the stove.


Yes, delicious, authentic and traditional Beans Paruppu Usili is ready. Serve it along with white rice, vatha kuzhambu or any spicy South Indian Kuzhambu or just with simple rasam sadam.
