Mixed Vegetable Paneer Curry/Paneer and Mixed Vegetable Curry

Hello friends,

I am back today with a very healthy and lovely vegetable paneer curry. I know it is really hard to get the kids to eat vegetables. But, when there is paneer involved in it, then it is easier for us to give the kids a healthy, filling and nutritious curry. This is a wonderful side dish for rotis, naan, chapathis, pulav, ghee rice etc. The best of it is, it can be made in a jiffy and does not involve grinding. Here’s how to make Vegetable Paneer Curry with step by step photos…



Ingredients

Paneer
200 gms
Onion
1 big finely chopped
Green Chillies
2 slit length wise
Tomatoes
4 finely chopped
Carrots
2 peeled and diced
Beans
10 finely chopped
Green Peas
1 small cup
Potato
2 peeled and diced
Cauliflower
One small cup
Ginger & Garlic Paste
1 tsp
Red Chilli Powder
1 ½ tsp
Coriander Powder
3 tsp
Turmeric Powder
½ tsp
Cumin Powder
1 tsp
Kasoori Methi
2 tsp crushed well
Fresh Cream
3 tbsp
Salt
As needed
Coriander Leaves
3 tbsp finely chopped

For Tempering
Oil
2 tbsp
Cinnamon Sticks
2 pieces
Cloves
3
Fennel Seeds
1 tsp
Cardamom
2
Bay Leaves
2
 Preparation Time: 15 minutes
Cooking Time: 25-30 minutes
Serves: 5-6

Method

Heat oil in a deep pan, splutter cinnamon sticks, cloves, cloves, fennel seeds, cardamom, bay leaves and fry until nice aroma fills the room.


Now add onions, green chillies and sauté until it changes to golden brown colour. Add ginger & garlic paste and fry until raw smell vanishes.


Add tomatoes and sauté well until it turns mushy.


Add all the vegetables, salt and saute for about 3 minutes. Now add red chilli powder, coriander powder, turmeric powder, cumin powder, required salt and mix well.



Add water to the vegetables, until they are submerged. Add one handful of mint leaves, Cover and cook until they are well done.

Meanwhile cut the paneer to pieces and fry it in a pan. Transfer it to a plate and keep it aside.


Check if the vegetables are cooked thoroughly, now crush the dry methi leaves/kasoori methi and add it to the gravy.

Finally add fresh cream and switch off the stove.


Now add the fried paneer pieces to the prepared gravy and give a quick stir.


Garnish with coriander leaves and serve it hot with ghee rice, pulav, roti, naan, chapathi etc.

Simple, healthy, quick and tempting Vegetable Paneer Curry is ready.
