Ghee Rice in Pressure Cooker/Easy, Quick & Flavourful Ghee Rice in Pressure Cooker/Easy Lunch Box Recipe-Nei Soru

Ghee Rice is a popular rice variety prepared in South India. The spices, nuts are roasted in ghee along with onions and rice, to make this traditional Ghee rice. This ghee rice can be made either by cooking using the dhum process or in pressure cooker. This aromatic ghee rice is usually paired with Chicken Kurma or Vegetable Kurma or any Kurma of your choice. Here’s how to make Simple Ghee Rice with step by step photos…

Ingredients

Basmati Rice

2 cups

Onion

2 big Sliced

Green Chillies

5-6 slit

Ginger & Garlic Paste

2 tbsp

Mint leaves

One handful

Salt

As needed

Water

3 cups

For Tempering

Ghee

2 -3 tbsp

Cinnamon Sticks

2

Cloves/Kirambu

6-7

Cardamom

3-4

Bay Leaf

2-3

Black Pepper Corns

1 tsp

Cashew Nuts

10-12 broken

Method

Wash the basmati rice 2-3 times thoroughly with water and drain it.

Add fresh water to the basmati rice and soak the rice for about 30 minutes.

Heat 2-3 tbsp of ghee in a pressure cooker.

Add cinnamon sticks, cloves, cardamom, bay leaf, black pepper corns and fry for about 20-30 seconds.

Add the broken cashew nuts and fry well for 30-40 seconds.

Add the sliced onions, green chillies, little salt and saute well until they turn to golden brown color.

At this stage add 2 tbsp of ginger & garlic paste and saute well until the raw smell vanishes.

Add the mint leaves and saute for another 30-40 seconds or until the mint leaves shrinks. Now add the washed and soaked basmati rice and give a good gentle stir.

Add 3 cups of water, required salt and let it come to a boil.

Close the pressure cooker lid and cook for 1 whistle and switch off the stove.

Wait for the steam to release all by itself and then open the lid.

Delicious, flavorful and tempting Ghee rice is ready to be enjoyed. Give a gentle stir and serve it hot with Chicken gravy or Vegetable Kurma or Egg kurma and Onion raita.
