Today, Iam going to share a very healthy, super delicious and traditional Puttu recipe from my kitchen. Earlier I have posted rice/arisi puttu, ragi/kezhvarugu puttu, rava puttu/sooji puttu which I have steamed with idli cooker. So, today I have a detailed post of cooking the puttu with puttu kuzhai/puttu maker. Do try out this red rice kuzhai puttu and post your comments here. Here’s how to make Red Rice Kuzhai Puttu with step by step photos…
Ingredients
Red Rice Puttu Flour
2 cup
Grated Coconut [fresh]
1 to 1 ½  cup or as needed
Water
As needed/Little water
Salt
As needed
Puttu Maker/Puttu Kuzhai

Method

Add the puttu flour to a bowl, add required salt to it and mix well. Grate the coconut and keep it aside.

Puttu Maker 



Sprinkle little water around 1 tbsp of water at a time and mix the flour with your hand.

Add water little by little and mix thoroughly until you are able to form a ball with the flour mixture. But the balls should break easily. Now the flour is ready to be steam cooked either in a idli cooker or with the puttu maker.

Let it rest for 5 minutes. Meanwhile pour water in the puttu steamer/puttu kudam and bring it to boil.

Next step is to layer the puttu flour into the cylindrical tube. First add little grated coconut to the puttu kuzhai.


Then add the prepared flour, about two fistful of it to the puttu kuzhai. Then again add grated coconut followed by puttu flour. 


Repeat the same process until the puttu kuzhai is full ending with grated coconut.

Now cover the puttu kuzhai with lid and place over the puttu kudam and let it cook.

Once the water starts to boil, you will notice the steam escaping from the top of the puttu kuzhai.

Continue to cook for 5-7 minutes and remove from heat. Nice flavour and aroma of the steamed puttu will fill the room, which indicates the puttu is cooked thoroughly.

Now remove the puttu kuzhai from the puttu kudam, open it and push the puttu gently from behind with a wooden ladle. The Puttu will slide on to your plate very easily.

Yes, delicious and flavourful Red Rice Flour Puttu is ready to be enjoyed. Serve it hot with sugar, banana and a cup of milk or with kadalai curry. My personal choice is sugar and a cup of milk.
