Simple & Quick Potato Gravy

This potato gravy is a very simple and quick to make. I usually make this for my kids, they love it because of the coconut milk. I make another version of potato gravy in which I add tamarind extract, but this one can be made in a jiffy to pack for lunch in the morning rush.

Here’s the simple potato gravy with step by step photos…


Ingredients

Onion
1 finely chopped
Tomato
2 finely chopped
Green chillies
2 slit length wise
Potatoes
4 cut to cubes
Red chilli powder
1 ½ tsp
Coriander powder
3 tsp
Turmeric powder
½ tsp
Coconut milk
¾ cup
Coriander leaves
3 tsp finely chopped

For Tempering

Mustard seeds
½ tsp
Cumin seeds
½ tsp
Urad dal
½ tsp
Oil
2 tsp
Curry leaves
6-8

Method

Wash, peel and cut the potatoes to cubes. Finely chop the onions and tomatoes.

In sauce pan heat oil, splutter the mustard seeds, add cumin seeds, urad dal, curry leaves.


Add onions, green chillies and sauté until golden brown. 


Add the tomatoes and sauté until mushy.


Now add the cubed potatoes, red chilli powder, coriander powder, turmeric powder, salt and sauté well for about 5-6 min.


Add about 1- 1 ½ cups of water, cover and cook the potatoes for about 6-8 min or until done.

When the potatoes are cooked add the coconut milk and let it boil for another 3 min. Now switch off the stove.

Delicious simple potato gravy is ready, serve it with chapathis, rotis or white rice.
