Mascarpone Cheese Frosting & Whipped Cream Frosting for Cakes Recipes with step by step photos

There are many types of frosting or icing that is made in different ways for the cakes. I personally prefer soft, light and fluffy cream for the cakes rather than the fondants. Last week I made the Mascarpone cheese frosting for my little girl’s Hello Kitty birthday cake, which I will be posting soon. For now I am posting the mascarpone cheese frosting and whipped cream frosting which can be used on any type of cakes, cupcakes and even Tiramisu.

Here’s how to make Mascarpone Cheese Frosting and Whipped Cream Frosting with step by step photos…

Mascarpone Cheese Frosting

Ingredients
Mascarpone Cheese
10 oz [one box]
Double Cream
500 ml
Vanilla Essence
½ tsp
Powdered Sugar
½ cup

Method

In a bowl add the mascarpone cheese and mix it well to make it soft.


In a large bowl add the double cream and mix with electric mixer on medium speed until it is really thick and forms a peak.


Now add the powdered sugar, vanilla essence and beat really well.


Add the mascarpone cheese and beat with the electric mixer until it can form a nice dollop of cream/stiff peak is formed as shown in the photo.


Decorate the cake or cupcake with piping bag or spread using spatula or knife.


Suggestions:

Keep the cream in the refrigerator if you are going to frost the cake later on.

Whipped Cream Frosting


Ingredients

Double Cream/Heavy Cream
3 cups
Powdered Sugar
½ cup
Vanilla Extract
2 tsp

Method

Chill the bowl and the electric whisk attachment in the refrigerator for 20 minutes or for 5 minutes in freezer.

Add the double cream in to the bowl and whisk on medium high speed until it starts to thicken.

Slow the speed to medium and slowly add the powdered sugar and continue to whisk until it form a peak.

Add the vanilla extract and continue to whisk by hand until stiff peak is formed.

Fluffy soft and whipped cream frosting is ready to be decorated on cakes or cup cakes.

  1. Looks good, sometimes the cream is too sweet when I order from Cake shop. I feel it should be less sweet to enjoy the cake.
