Zucchini/Courgette Kootu

Kootu is a very common and a staple food of Tamil Nadu. It is a very healthy combo of vegetable of your choice and dhal cooked together along with other ingredients. No feast in Tamil Nadu is complete without a kootu. I have already posted different type of kootu varieties prepared in most of the households in Tamil Nadu. But this kootu is very special, the reason is, it is a perfect blend of South Indian cooking with an exotic and a versatile vegetable, none other than “zucchini/Courgette”. Here’s how to make Zucchini Kootu with step by step photos….

Ingredients
Zucchini/Courgette
2 cut to cubes
Moong dal
½ cup
Onion
1 finely chopped
Tomato
2 finely chopped
Sambar powder
½ tsp
Turmeric powder
¼ tsp
Asafoetida/Perungayam
One pinch
Salt
As needed

For Grinding
Grated coconut
¼ cup
Green chillies
4
Black pepper
1 tsp
Cumin seeds
2 tsp

For Tempering
Oil
2 tsp
Mustard seeds
½ tsp
Cumin seeds
½ tsp
Dry red chillies
2 -3
Curry leaves
6-8

Serves: 3-4
Method

Wash and cut the zucchini to cubes, I have not peeled the skin. If you don’t want the skin, just peel it and make Zucchini Chutney.

Grind the ingredients mentioned under grinding and keep it aside.

Wash the moong dal thoroughly, add asafoetida powder, turmeric powder, salt, enough water and cook in pressure cooker for 2 whistles.

After the steam releases, open the pressure cooker add the cubed zucchini to it, about ½ cup water and pressure cook for one more whistle. Alternatively you can cook directly on the stove without using the pressure cooker.

After the zucchinis are cooked, add the ground coconut paste and mix thoroughly.

Meanwhile heat oil in a kadai, splutter mustard seeds, then add cumin seeds, curry leaves, dry red chillies and saute for about a minute.

Now add the finely chopped onions and saute until translucent.

Add the finely chopped tomatoes and fry until they are mushy.

Now add the dal+zucchini+coconut mixture to the tempering and mix really well. Add the sambar powder and mix thoroughly. Adjust the amount of water  and salt  according to your requirement.

Mix everything really well, when it comes to boil, just switch off the stove.

Yummy, delicious, healthy and mouthwatering Zucchini Kootu is ready to be enjoyed.
