Carrot & Tomato Kootu [No grinding]

This carrot & tomato kootu is the easiest kootu to make especially in the morning rush when you need to pack lunch. The best part of it is you don’t need to grind anything, yes I can  see lot of smiles in all of your face. I make this kootu when I am totally tired and when I don’t want to cook, but still have to cook. It is so easy, just add everything to the cooker, pressure cook it and then finally temper it. See, how easy it is? Still a very healthy and heavenly tasting kootu. Now let’s move on to the recipe.

Here’s how to make Carrot & Tomato Kootu with step by step photos…
Toor dal/Thuvaram Paruppu
1 cup
2 chopped
3 [peeled & cut to dices]
Green chillies
3 or 4
Sambar Powder
2 tsp
Turmeric powder
¼ tsp
As needed

For Tempering
1 tsp
Mustard seeds
½ tsp
Cumin seeds
½ tsp
Dry red chillies
1 or 2
Curry leaves
One pinch

Wash the toor dal/thuvaram paruppu, add enough water (2 ½ cups) of water and pressure cook for two whistles. Now switch off the stove.

After the steam releases, open the lid, add tomatoes, carrots, green chillies, sambar powder, turmeric powder, salt and ¼ cup of water to the dal.

Pressure cook for another two whistles and switch off the stove. Open the lid after the steam releases.

Heat oil in a pan, splutter mustard seeds, then add cumin seeds, dry red chillies, curry leaves and asafoetida.

Add the tempering to the cooked kootu. Adjust the water consistency accordingly.

Ta da!!! Delicious, healthy and yummy kootu is ready to be enjoyed. Serve it hot with steamed rice, rotis, chapatis etc.
