Beetroot Pachadi/Beetroot Raita [Kerala Style]

This week I have made a couple of pink dishes and I am going along with the pink theme. With the left over beetroots I made a very authentic, traditional Kerala dish – “Beetroot Pachadi/Beetroot Raita”. This beetroot pachadi is usually prepared during Onam Sadya along with other Sadya recipes.

Here’s Beetroot Pachadi/Beetroot Raita with step by steps photos….


Ingredients

Beetroot
1 big
Thick Curd/Yogurt
1 cup
Water
½ cup
Salt
As needed

For Grinding

Grated Coconut
3 tbps
Cumin seeds
½ tsp
Mustard seeds
¼ tsp
Green chillies
3
Ginger
1 inch piece
Dry red chillies
1 or 2
Curry leaves
4 or 5 leaves

For Tempering

Coconut oil/Sunflower oil
1 tsp
Mustard seeds
½ tsp
Dry red chillies
1 [optional]
Curry leaves

Method

Wash, peel and grate the beetroots with a grater.

Add the grated beetroots to the kadai, add about ½ cup of water, salt and let it cook for about 8-10 minutes or until the beetroots are cooked.


Meanwhile grind the ingredients mentioned for grinding to fine paste by adding little water.

Add the ground coconut paste to the beetroot and mix really well. Cook for about 2-3 minutes in low flame or until all the water evaporates.


Switch off the stove and let the beetroot and coconut mixture cool completely.

Now add the thick curd/yogurt to the cooked beetroot and mix well. Adjust the amount of salt needed at this point.


Heat oil in a kadai, splutter mustard seeds then add dry red chillies, curry leaves and saute until the curry leaves turn crispy and switch off the stove.

Add this tempering to the beetroot pachadi.


Yummy, delicious and healthy beetroot pachadi is ready to be enjoyed. Serve it with white rice, sambar, rasam or even with rotis and chapathis.
