Stuffed Capsicum /Stuffed Bell Pepper baked in Oven

Hello Friends,

Today I am going to share a very easy and lovely, stuffed capsicum baked in oven. I have used potato filling in the capsicum, you can very well replace it with chicken masala, peas & cauliflower masala , rice and meat etc. Do try out these lovely stuffed capsicums and have a great day.

Here’s how to make Stuffed capsicum… 


Ingredients

Capsicum/Bell Pepper

Potatoes
2 [Boiled & mashed]
Onion
1 finely chopped
Asafoetida Powder/Perungayam
One big pinch
Red Chilli Powder
1 tsp
Coriander Powder
1 ½ tsp
Garam Masala Powder
1 tsp
Turmeric Powder
¼ tsp
Lemon Juice
¼ tsp
Cumin Seeds
½ tsp
Oil
1 tbsp
Salt
As needed
Curry Leaves
6-8
Cheese Slices
3 or 4
Preparation Time: 10 minutes
Cooking Time: 15-20 minutes
Baking Time: 20-25 minutes
Serves: 4

Method

For the Stuffing

Wash and boil the potatoes. Now the peel the potatoes and mash it really well.

Heat oil in a kadai, splutter cumin seeds. Now add the onions and sauté until translucent.
Add red chilli powder, coriander powder, turmeric powder, garam masala powder, salt and sauté for about a minute.

Now add the mashed potatoes and mix well. Let it cook for another 3-5 minutes and switch off the stove. Finally add the lemoin juice and mix thoroughly.

Preparing the BellPeppers/Capsicums

Wash the bell peppers/capsicum thoroughly. Cut the top of the capsicum and scoop out the center. If the peppers do not stand up straight, slice a little off the bottom of the pepper to just level it off.

In a large sauce pan, boil the capsicums/bell peppers until crisp tender for about 3-4 minutes. Do not overcook the bell peppers or else they will become soggy.
Remove the Peppers from hot water and rinse them with cold water to stop them from cooking.

Preheat the oven to 180 C

Fill the Capsicums

Now scoop out the potato masala and fill the capsicums with it. Finally either sprinkle grated cheese or cut the cheese slices and keep it on the top.

Place the Capsicums/Bell Peppers in a baking dish. Drizzle few drops of oil on the capsicums.

Bake the capsicums/peppers for about 20 minutes. Remove from the oven and serve immediately.

Delicious and tempting Stuffed Capsicum is ready to be enjoyed.
