 Junnu/Kharvas is a milk pudding usually prepared with colostrum milk that a cow produces for the first few days after it delivers a calf. This milk pudding is called as Junnu is Telugu, Kharvas in Marathi, Ginnu in Kannada and Seema Paal in Tamil. Today, I am going to share Junnu recipe without using Colostrum Milk. Here’s how to make Junnu Recipe with step by step photos…

Ingredients

Milk [Full Cream]

1 cup

Condensed Milk

1 cup

Yogurt/Curd

1 cup

Milk Powder

½ cup

Cardamom Powder/Elachi Powder

¼ tsp

Corn Flour

1 tsp

Method

Grease a bowl with butter or ghee in which junnu needs to be steam cooked.

Take a bowl, add yogurt and whisk really well until really smooth without any lumps.

Add ½ cup milk powder and whisk really well until well combined. Use a whisk to mix them thoroughly.

Next add 1 tsp of corn flour and whisk well without any lumps.

Now add 1 cup of condensed milk and mix in really well.

Add 1 cup of full cream milk to the bowl and whisk really well.

Finally add the cardamom powder and mix thoroughly.

Now pour the mixture to the greased bowl and cover it with aluminum foil.

Add water to pressure cooker and a stand as shown in the photo to cook the Junnu.

Keep the bowl inside the pressure cooker, close the lid and cook for about 25-30 minutes on medium flame.


Open the lid and check if the Junnu is cooked. You can check by inserting a tooth pick, if it comes out clean then switch off the stove.

Remove the bowl from the pressure cooker and let it cool down completely.

Then keep it in refrigerator for about 2 hours. Remove from the refrigerator, cut into pieces.

Delicious and super soft Junnu/Kharvas is ready to be enjoyed. Sprinkle some sliced almonds and serve them cold.
