Now add dry red chillies, Kashmiri red chillies and saute on low flame until the color slightly changes.

At this stage add the garlic cloves and saute well until the color changes.

Finally add tamarind, stir really well and switch off the stove.

Transfer it to a plate and let it cool down.

Add this mixture to a mixer jar, required salt, 1/2 tsp jaggery and grind it with 1-2 tbsp of water and keep it aside.

Meanwhile heat 1 tbsp of oil to the same pan/kadai, add the chopped onions to the pan.

Add little salt to the onions and sauté well until they turn translucent. Switch off the stove and let the onions cool down.

Add the onions to the same mixer jar and grind it to fine paste.

Heat 2 tsp of oil in a kadai/pan, splutter mustard seeds, then add asafoetida and curry leaves.
