Pottukadalai Sambar/Roasted Gram Sambar/Dalia Sambar

Sambar is a South Indian delight prepared in all the houses either as side dish or for lunch to be had with white rice. We make different types of sambar like drumsticks sambar, small onion sambar, milagai killi potta sambar, pachhaparuppu sambar, arachu vitta sambar, paruppu kuzhambu, paruppu thakkali etc. But each sambar has unique taste and different from one another. Even adding different types of vegetables adds different taste to the sambar. In this post I am going to share a very healthy and unique Pottukadalai sambar, made with just roasted gram/pottukadalai and vegetables. Here’s how to make Pottukadalai/Roasted gram sambar with step by step photos…


Ingredients
Onion
1 finely chopped
Tomato
1 finely chopped
Carrot [Any vegetable of your choice]
1 big chopped
Green chillies
2 slit lengthwise
Tamarind/Puli
One small gooseberry size
Turmeric powder
¼ tsp
Cilantro/Coriander leaves
2 tbsp finely chopped
Salt
As needed

For Roasting and Grinding
Dry red chillies
4-5
Coriander seeds/Dhaniya
1 tbsp
Onion
1 finely chopped
Tomato
1 finely chopped
Coconut [grated]
2 tbsp
Pottukadalai/Roasted gram/Dalia
2 tbsp
Curry leaves
10-12
Oil
1 tbsp

For Tempering
Oil
1 tbsp
Mustard seeds
½ tsp
Cumin seeds
½ tsp
Asafoetida/Hing
One pinch
Curry leaves
10-12

Method

Heat oil in a pan add dry red chillies, coriander seeds/dhaniya, curry leaves and fry until nice aroma arises.

Now add the onions, tomatoes and fry for another minute.

Finally add the grated coconut, roasted gram dhal/dalia/pottukadalai and fry for another minute and then switch off the stove.

After it cools down, grind it in the mixer to a fine paste. Extract the tamarind juice with ½ cup water and keep it aside.

Heat oil in a pan, splutter mustard seeds, then add cumin seeds, curry leaves, asafoetida and fry for 20 secs.

Now add the onions, green chillies, curry leaves and saute well until it changes to golden brown colour.

Add the tomatoes and saute well until mushy.

Add the carrots and saute well for about 3-4 minutes.

Add the ground pottukadalai/roasted gram paste, tamarind water, salt, turmeric powder and mix thoroughly.

Let it boil for another 5-7 minutes or until the raw smell vanishes. Adjust the consistency by adding required amount of water.  Finally add the chopped cilantro and switch off the stove.

Delectable and yummy Pottukadalai Sambar is ready to be served. Enjoy it with a bowl of steamed rice, potato fry and appalam.
