Onion Sabzi/Kande Ki Sabzi

Kande Ki Sabzi/Onion Sabzi is a simple yet delectable Rajasthani recipe made with two main ingredients onions and yogurt. The onions are cooked in yogurt along with perfect blend of spices, this in turn gives a creamy and tender texture to the onions. Onion Sabzi is a perfect side dish for rotis, naan etc.

Here’s how to make Onion/Kande Ki Sabzi with step by step photos…


Ingredients

Onions
½ kg sliced
Cumin seeds/Jeeragam
1 tsp
Ginger & Garlic paste
3 tsp
Red chilli powder
1 tsp
Coriander powder
1 tsp
Turmeric powder
½ tsp
Garam Masala Powder
½ tsp
Yogurt/Curd/Dahi
½ cup
Oil
3 tbsp
Asafoetida/Hing
¼ tsp
Salt
As needed
Cilantro/Coriander leaves
3 tbsp finely chopped
Preparation time: 10 minutes
Cooking time: 20-25 minutes
Serves: 5-6

Method

In a big bowl, add yogurt/curd, 1 cup of water, red chilli powder, coriander powder, turmeric powder, garam masala powder, salt and mix thoroughly. Keep this yogurt/curd mixture aside.


Heat oil in a kadai, add asafoetida and splutter cumin seeds for about 30 secs.


Add ginger & garlic paste to the oil and saute until the raw smell vanishes.


Now pour the yogurt mixture and let it come to boil.


Add the sliced onions, 1 tbsp of cilantro and mix thoroughly. 


Let it cook for about 15 minutes on low flame. The curd will evaporate and the onions will be tender at this point.

Switch off the stove, garnish with cilantro and enjoy this delectable and lovely onion subzi with roti, naan, paratha or even with white rice.
