Whenever I want to make a quick dinner, I immediately tend to make pasta. The main reason is, it is one quick wholesome meal and my kids love it. This cilantro almond pesto is a very easy to prepare but the taste is simply awesome. The almond pesto can be used as dip for any kind of breads or as spread for sandwiches. The pasta made with almond pesto is a very healthy when compared to the cheesy pastas but it still has the nutty and creamy texture because of the almonds. Do give it a shot friends and you will surely love it.

Here’s how to make Cilantro Almond Pesto – Bow Tie Pasta with step by step photos….

Ingredients for

Cilantro Almond Pesto
Cilantro/Coriander Leaves
1 ½ cup tightly packed
Almonds/Badam
15
Garlic cloves
5-6
Green Chillies
3-4
Salt
As needed
Lemon Juice
Few drops
Olive Oil
2 tbsp

For Pasta
Bow Tie Pasta
1 cup
Salt
As needed
Oil
1 tsp
Water
To Cook pasta

Method
The first step is to blanch the almonds – soak the almonds in hot water for about 5 minutes.

Then peel off the skin and keep it aside.


In a pan, roast the garlic with few drops of oil, transfer it to a plate and let it cool down.


In a mixer/food processor add cilantro/coriander leaves, blanched almonds, garlic cloves and salt until well blended. Add olive oil pulse it for two to three times or until well blended.


Transfer it to a bowl, add few drops of lemon juice, mix it well and keep it aside.


Yes, delicious Cilantro & Almond Pesto is ready.

To Make Pasta

Heat about 5-6 cups of water along with salt and oil in a deep pan. Add the bow tie pasta and cook till soft. [Cook pasta according to package instructions – each pasta takes different time to cook]


Drain the pasta and rinse under cold running water.


Now add the freshly prepared Cilantro Almond Pesto to the cooked Pasta and mix really well until the pasta is coated well with the pesto.


Exotic and super tempting Almond Pesto Pasta is ready to be enjoyed. Sprinkle red chilli flakes and serve it hot.


Suggestions:

I have used almonds to make the pesto, you can replace it with pine nuts or cashew nuts.

You can very well use any type of pasta according to the availability.

You can make the pesto in advance and refrigerate for up to 3 days. If you make a big batch of pesto, you can as well freeze it in ice cube tray and save it for future use.

This pesto can be served a dip for any type of breads , rotis etc or as a spread for sandwiches.
