Banana Muffins [Low Fat Version]

This Banana Muffin is a tried and tasted recipe from a cook book. It is a low fat version by the weightwatchers. These muffins are gorgeous for breakfast, served with honey and glass of milk. Do try it out friends, you will surely like it.

Here’s how to make Banana Muffins with step by step photos…

Ingredients

All Purpose Flour
2 cups
Baking Powder
½ tsp
Baking Soda
½ tsp
Salt
¼ tsp
Egg
1 Beaten
Brown Sugar
4 Tbsp
Bananas
3 [well ripened, peeled and pureed]
Oil
4 Tbsp
Recipe Source: Cook Smart Baking [Weight Watchers]
Preparation Time: 15 minutes
Baking Time: 20 -25 minutes
Serves: 10 - 12 muffins

Method

Preheat the oven to 170 °C.

Sift the flour, baking powder, baking soda and salt together into a bowl.

In another bowl, beat together one egg, sugar, oil and bananas. [I added everything in the mixer and ground them together.]

Now add the banana mixture to the flour mixture and mix it really well.

Fill ¾ of the muffin tin with the batter and bake it in the oven for 20 -25 minutes.

Cool it on the rack for 5 to 10 minutes before serving.

Super delicious Banana muffin is ready to be enjoyed.

Suggestions:

  • The original recipe called for 5 tbsp of sugar, but I added only 4 Tbsp of sugar. If you want you can increase the amount of sugar.
  • The original recipe used corn oil for the muffins, but I used the sunflower oil.
  • If the batter is really very thick in consistency then you can adjust it by adding 2 or 3 tbsp of water.
