Heat a pan and dry roast the oats until nice aroma comes in a medium flame. Transfer it to a plate and keep it aside.

Heat oil in a kadai, splutter mustard seeds, then add cumin seeds, split urad dal, chana dal, peanuts and fry until they turn golden brown color. Now add green chillies, ginger, curry leaves, asafoetida and fry for about a minute.

Add 2 cups of water, salt, turmeric powder and let it boil.

When it comes to rolling boil add the roasted oats and stir well.

Let the oats cook for about 3 minutes.

Finally add the lemon juice and stir well on low flame for about a minute. Now switch off the stove and serve hot.

Delicious, healthy and tangy Lemon Oats is ready to be enjoyed.

I have used Quaker oats, adjust the water level according to the oats you are using.
This Lemon Oats upma does not need any side dish, but can be served with any chutney of your choice.
I have dry roasted the oats, so that the upma will be fluffy. But if you are running out of time you can skip that step and follow the same procedure.
Adjust the amount of lemon juice according to your taste.
