Chana Masala/Chole Masala

Hello Friends,
Wish you all a very “Happy Friendship Day”, I hope you all are having a great day and a great week end. Here’s a very famous chana masala/chole masala which we find in all the Indian restaurants. It is very healthy and protein packed dish that can be served with rotis or just with a bowl of rice.

Here’s how to make Chana/Chole Masala with step by step photos…



Ingredients
Chana/Chickpeas/Garbanzo beans
2 cups
Onion
1 finely chopped
Red chilli powder
1 ½ tsp
Coriander powder
2 tsp
Garam masala powder
1 tsp
Turmeric powder
½ tsp
Coriander leaves
2 tbsp finely chopped
Salt
As needed

For Grinding
Onions
2 chopped
Tomatoes
2 large chopped
Ginger & Garlic paste
2 tsp
Cumin seeds
1 tsp
Oil
2 tsp

For Tempering
Fennel seeds/Sombu
1 tsp
Cinnamon sticks
2 (1 inch) sticks
Bay leaves
2 leaves
Oil
1 tsp
Preparation time:10-15 min
Cooking time: 3o min
Serves: 4-6

Method

Soak the chana/chickpeas overnight and pressure cook it for 3 whistles and save the cooked water.

Heat oil in a kadai, add cumin seeds followed by onions, saute the onions until golden brown.

Add tomatoes and saute for 2-3 min,  followed by ginger and garlic paste. Cook them well until they turn mushy.


Switch off the stove. Cool it and blend it to fine paste and keep the puree aside for later.


Heat oil in a pan, add fennel seeds, bay leaves, cinnamon sticks and saute until nice aroma comes out.  Add finely chopped onions and saute until golden brown.


Add the ground puree, when it starts to boil add the red chilli powder, coriander powder, turmeric powder, garam masala powder and salt. Let it cook until raw smell goes off and oil starts to leave the sides of the pan.


Now add the cooked chana/chickpeas and the water, cook for another 15 to 20 min or pressure cook for one whistle.


Finally add the chopped coriander leaves and stir it well. Adjust the consistency according to your requirement.

Delicious chana masala/chole masala is ready to be served. Serve it warm with rotis, puris, chapathis or a bowl of white rice.
