Today I made very simple and easy blueberry muffins for my kids. The fresh blueberries in the muffins were really extraordinary. Blueberries are one type of berries with dark indigo colour and have the highest antioxidants level. The blueberries activate fat burning genes in abdominal fat cells to assist with weight loss. So, one handful of blueberries in your morning breakfast helps in burning the excess fat.  Not only that they are rich in vitamin C, E, riboflavin, niacin and folate.

Ingredients
All Purpose Flour/Maida
1 ½ cup
Caster sugar
¾ cup
Baking powder
2 tsp
Salt
1/8 tsp
Vegetable oil
1/3 cup
Egg
1
Milk
5 tbsp
Vanilla extract
1 ½ tsp
Fresh Blueberries
1 cup

Method
Wash, pat dry the blueberries and keep them aside.

Preheat the oven to 200 C/390 F. Line the muffin pan with cupcake liners. 

In a big bowl sift all-purpose flour and baking powder together. To the same bowl add the caster sugar, salt and whisk really well for about 10 minutes with a hand whisk.

In another bowl, mix the egg and vegetable oil really well until combined thoroughly. Add the vanilla extract and milk to the oil mixture and mix well.


Now add the wet ingredients to the flour mixture and mix with a spatula. Do not over mix otherwise the muffins will turn hard.


Add the blueberries and gently fold it in the mixture, the consistency should be thick and not watery. If it is really thick add one tbsp of milk and mix.


Slowly scoop out the mixture to the muffin pan and bake it for about 20-25 minutes or until the tooth pick comes out clean.

Delicious and lovely Blueberry Muffins are ready to be enjoyed, perfect evening snacks for your kids.

  4. Yum yum!!! The muffins are gorgeous and I do agree on the nutrients of berries. But they are expensive over here, so I depend on local fruits for the same source.
