Dates & Nuts Cake Recipe[Egg less & Butter less]/Dates & Nuts Cake Recipe with step by step photos

Dates & nuts cake is a delectable and a very easy cake to make. The most astonishing part is, though the cake is egg less and butter less, it is still spongy, soft, moist and yummy. The addition of nuts is optional, but when added has small crunchy bites makes the nutritious and healthy.

Here’s how to make Dates & Nuts cake with step by step photos…
Ingredients
All-purpose flour/Maida
1 ½ cup
Baking soda
2 tsp
Baking powder
¼ tsp
Salt
1/8 tsp
Dates [deseeded]
20 - 22
Milk
1 ½ cup
Sugar
½ cup
Oil
½ cup
Almonds or any nuts
10 to 12 chopped
Vanilla essence
½ tsp
Preparation time: 10-12 minutes
Baking time: 40-45 minutes
Makes: 25-30 pieces

Method
Preheat the oven to 180 C/350 F. Line a cake tin with parchment paper. I used 9 inch cake tin.

Heat ½ cup of milk in microwave/stove, add the dates and soak for about 15 minutes. Add it to the blender and grind it to fine paste.


In a wide bowl, sift all-purpose flour, baking soda, baking powder, salt and mix together.


In another bowl add one cup of milk and sugar. Mix well until the sugar dissolves completely.

Now add the oil, vanilla essence and mix well.


Add the dates paste and mix really well.


Add the flour mixture and mix well with a spoon or use a hand mixer. Finally add the almonds and mix really well.


Pour the cake mixture in to the cake tin and give a good tap on the counter top to get rid of air bubbles. 

Bake for about 40 to 45 minutes or until the tooth pick comes out clean.


Suggestions:
Addition of nuts is totally optional; you can any nuts of your choice. You can as well add raisins for additional taste.
