Kambu Dosai/Bajra Dosai/Pearl Millet Dosai/Kambu Dosai Recipe

Kambu/Pearl millet/Bajra are widely grown type of millest with high protein and fibre content. India is the largest producer of pearl millet/kambu. Pearl millet is known by different names Sajje in Kannada, Kambu in Tamil, Bajra in Hindi, Sajjalu in Telugu and Kambam in Malayalam. After moving back to Chennai, I tried different types of millets, one among them is the Kambu Dosai. I will be sharing more millet recipes in future. Here’s how to make Kambu Dosai with step by step photos…
Ingredients

Kambu/Bajra/Pearl Millet
1 ½ cup
Idli rice
½ cup
Urad dal
½ cup
Fenugreek seeds/Vendhayam
1 tsp
Salt
As needed
Preparation time: 20 minutes[for grinding]
Cooking time: 10-15 minutes
Makes: 12-15 dosas

Method

Kambu/Pearl Millet/Bajra


Add kambu, idli rice, urad dal, fenugreek seeds in a big bowl. 


Rinse and wash everything at least two to three times. Soak with fresh water overnight or atleast for 5-6 hours.

Drain the water, wash and rinse with fresh water thoroughly. Grind everything in a grinder to a fine paste with enough water as needed.


Transfer it to a big vessel. Add enough salt and mix well. Let it ferment for 8-10 hours or overnight.

Heat the dosa tawa, pour one ladle full of batter and make dosa by spreading in a circular motion from inside. Drizzle oil along the sides of the dosa and cook evenly on both the sides.

Delicious and healthy Kambu dosa is ready to be served. Serve this healthy dosa with any chutney of your choice.  You can also serve with any spicy kuzhambu of your choice. I actually served this kambu dosa with fish gravy which was totally irresistible.
