Method
To Make Egg Masala

Boil the eggs, peel the shell and keep it ready. Do check out how to make perfectly boiled eggs here.

Chop the boiled eggs and keep it ready.

Chop the onions, tomatoes, green chillies and keep it ready.

Heat 2 tsp of oil in a pan, splutter mustard seeds and cumin seeds.

Add chopped onions, green chillies, curry leaves and saute well until the onions change translucent.

Add ginger & garlic paste and fry until raw smell vanishes.

Now add the chopped tomatoes and fry well until they turn mushy.

Add red chilli powder, coriander powder/dhaniya thool, turmeric powder, salt and mix thoroughly.

Saute for about a minute for the raw smell to vanish.

Add about ½ cup of water, chopped cilantro and let it come to boil.

When all the raw smell has vanished and the masala has become a little thick add the chopped  kothamalli/cilantro and chopped boiled eggs.

Mix the eggs really well, but gently so that all the masala is combined well with the eggs.

Keep it for about a minute and switch off the stove. The Egg Masala stuffing for the sandwich is ready.

To Make Sandwiches

Heat a tawa, spread some butter on the bread slices and keep it on the tawa.

Now keep about 2-3 tsp of egg masala on the bread slices. Drizzle little oil around the bread slices and cook on low flame.

Close it with two slices of bread spread with butter as shown in the photo.

Cook to golden brown color on both the sides by flipping the sandwiches carefully. Cut the sandwiches as shown in the photo. Cook to beautiful golden color and transfer it to a plate.

Similarly make rest of the sandwiches.

Delicious, spicy and filling Egg Masala Sandwiches is ready to be enjoyed. Serve it hot with tomato sauce/ketchup either for breakfast or as evening snacks for kids.
