Karamani/Black Eyed Beans Patties/Tikkis

Yesterday I posted a very healthy and delicious Black Eyed Bean Soup, I had about a cup of cooked beans left. So I made some healthy patties as evening snacks for my kids. It is so easy, quick and super healthy, you can have them for evening snacks or toast some bread slices, keep the patties in the middle along with a cheese slice and have them as sandwiches.

Thayir vadai is yet another delectable and my favourite evening snack. I love it so much I can finish off one whole plate in no time. The best part of thayir/curd vadai is, though the vadai’s are fried in oil, as they are soaked in water for about a minute and when squeezing out the water all most all the oil also comes out of the vadai and they become very soft. Blackberry Milkshake Recipe

Blackberries are available from the end of July through mid of October in UK. They are very delicate, shiny and purply black coloured berry. Blackberries are packed with antioxidants including vitamin C and ellagic acid, these help in protecting against cancer and other chronic diseases. Blackberries are very good source of fibre because they have a lot of tiny seeds, every 100 gm of blackberries have 5 gm of dietary fibre. Ammini Kozhukattai/Mani Kozhukattai/Ganesha Chathurthi Recipes

The first thing that comes to mind when it is Ganesha/Vinayagar Chathurthi is Modhakam which we prepare as special offering for Lord Ganesha. We also prepare different types of kozhukattai’s like paal kozhukattai, kaara kozhukattai, pidi kozhukattai etc. When we make modhakams or kozhukattai we always tend to have some dough left, this mani kozhukattai is usually prepared with that dough only. But nowadays we all prepare this mani kozhukattai separately as offering to Lord Ganesha. Not only for Ganesha Chathurthi, I make this mani kozhukattai as evening snacks for my kids and they love it because they are cute and tasty.

Today I was in no mood to do an elaborate cooking, so made a very quick and simple garlic and herbs penne pasta with parmesan cheese. Actually the name says it all; it can be made in no time with very less ingredients. I made this pasta and served them with fresh zucchini stir fry. It was an elegant and heavenly Italian lunch which just made our day. My kids love pasta and they got excited and finished them all.
