Honey Drizzled Semolina Cake Recipe/Basbousa/Rava Cake/Sooji Cake/How to make Sooji Cake with step by step photos

This Honey Drizzled Semolina Cake is for the Home Baker’s Challenge started by Mrs.Priya Suresh and hosted by Mrs. Shama Nagarajan. Thank you very much Mrs. Priya Suresh and Mrs. Shama Nagarajan for this wonderful and exciting challenge.

This month Mrs. Shama had chosen  5 different types of  cakes and muffins. Off all the five recipes I chose to do the Honey drizzled Semolina Cake. This cake is called as Basbousa/Hareesa in Arabic, Revani in Turkish, it is nothing but a sweet cake made with semolina  and soaked in a simple syrup. The basbousa or the honey drizzeld semolina cake is found in the cuisines of Eastern Mediterranean under different names. [Source:Wikipedia]

This cake is very easy to make, it is really soft, moist and spongy. Once you start you can never stop eating them. Try it out guys you will surely fall in love with it. Usually nuts are placed on top of the cake as part of decoration on each piece of cake, which you can do it before serving. My kids were in a hurry for the cake so could not place almonds before the clicks, even my clicks were in a rush.

Here’s how to make Honey Drizzled Semolina Cake with step by step photos…


Ingredients
Unsalted butter
1 stick [softened]
Sugar
1 cup
Eggs
2
Milk
 ½ cup
Vanilla extract
½ tsp
Fine yellow semolina
2 cups
Baking powder
1 tsp
Baking soda
½ tsp
Salt
One pinch

For the Syrup

Sugar
1 cup
Honey
½ cup
Water
1 cup

Method
Preheat the oven to 35o°F. Grease a 9 x 13 inch baking pan. Line it with parchment paper and grease the parchment paper too.

Cream the butter and sugar using a handheld or an electric mixer or with a whisk.


Add eggs one by one and beat it well. 


Now add the milk, vanilla extract and mix it well together. The batter will look curdled at this point, but don’t worry.


In another bowl whisk together the semolina, baking powder, baking soda and salt.


Slowly add the semolina mixture to the butter & egg mixture and beat until just smooth.


Pour the batter into the prepared pan. 


Now bake for 20- 25 minutes, just until the cake is firm and slightly golden. It should also just start to pull away from the edges of the pan.



Making Honey Syrup

While the cake is baking, make the syrup. Combine the sugar, honey and water and stir with a spoon to dissolve the sugar. Bring it to boil over medium high flame. Stir continuously to make sure the sugar and honey dissolve. Lower the heat slightly and simmer for 5 minutes, until the syrup has thickened.


As soon as you take the cake out of the oven, pour the syrup slowly over the hot cake, stopping when the cake can absorb no more syrup.


Cool, then cut in to squares and serve.


Delicious and mouth-watering semolina cake is ready, so why are you guys waiting just enjoy…

Suggestions & Observations:
  • If you do not get fine semolina, you can pulse the regular semolina in the mixer and then use it.
  • My semolina cake was perfectly bakes at 30min, so it depends on your oven. Do check out the cake between 25th min and 30th min.
  • The cake will drink all the syrup, so it will be moist and soft.
