Soya Chunks Vegetable Curry

Today for the third consecutive day I am posting another very healthy and delicious Soya Chunks Vegetable curry. My mom used to prepare this vegetable soya curry very often as side dish for dosas and chapathis when I was a kid. Do try this curry and let me know your feedback.

Here’s how to make Soya Chunks Vegetable Curry with step by step photos…


Ingredients

Soya Chunks/Meal Maker
30-35
Mixed vegetables[Carrots, beans,peas]
2 cups finely chopped
Onion
1 [big]  finely chopped
Tomato
2 finely chopped
Green chillies
2 or 3 slit lengthwise
Ginger & Garlic paste
1 tsp
Red chilli powder
1 tsp
Coriander powder
2 tsp
Turmeric powder
¼ tsp
Gram flour/Kadalai Maavu
2 tbsp
Salt
As needed
Lemon juice
2 tsp
Coriander leaves/Cilantro
One fistful finely chopped

For Tempering
Oil
1 tbsp
Cinnamon sticks
2
Bay leaves
2
Cloves
2
Fennel seeds/Sombu
1 tsp

Method

In a pan boil water.  Once the water boils turn off the stove.  Add the soya chunks to it and keep it covered for 20 minutes. 


The soya chunks will double its size. Now drain the water, wash it with fresh water at least 2-3 times and squeeze the water completely. Cut them into halves and keep it aside for later.


Cook the vegetables separately in water with a pinch of salt and keep it aside. I cooked them in the microwave (auto cook) for about 5 minutes.


Heat oil in a kadai and add the ingredients mentioned under tempering, fry them till nice aroma arises.

Add the onions, green chillies and sauté until they turn golden brown. Add the ginger & garlic paste and fry until the raw smell vanishes.


Now add the tomatoes and sauté until they turn mushy.


Add the red chilli powder, coriander powder, turmeric powder, salt and mix thoroughly for about a minute.



Add the chopped soya chunks/meal maker and mix well.


Now add the cooked vegetables and stir well. 


Add about 1 to 1 ½ cup of water, 1 tbsp of cilantro and let it boil for about 5-7 minutes.


Mix the gram flour/kadalai maavu in ¼ cup of water. Now add the gram flour mixture to the soya chunks. This gram flour mixture will give the curry thick and creamy consistency.


Finally add the finely chopped coriander leaves, drizzle some lemon juice and switch off the stove.


Super delicious, healthy and mouth-watering Soya Chunks Vegetable Curry is ready to be enjoyed.

Serve it hot with rotis, chapthis, naans, dosas or idlis.

Suggestions:
  • I have used gram flour to thicken the gravy, instead of that you can add boiled, peeled and mashed potatoes.
  • Adjust the spice level and lemon juice according to your taste.
