Chicken Masala with Roasted Spices/Chicken Masala Recipe/Chicken Masala with Fresh Spices with step by step photos

This Chicken Masala is aromatic and made with freshly roasted and ground masala powder. Here’s how to make Chicken Masala with step by step photos….
Ingredients
Chicken
500 gms
Onion
2 thinly sliced
Tomato
2 big finely chopped
Ginger & garlic paste
1 tbsp
Red chilli powder
1 ½ tsp
Turmeric powder
½ tsp
Dry ginger powder
½ tsp
Salt
As needed
Oil
2 tbsp
Cilantro/Coriander leaves
2 tbsp finely chopped

To Roast and Grind
Coriander seeds/Dhaniya
1 tbsp
Cumin seeds/Jeeragam
2 tsp
Black pepper corns/Milagu
1 tsp
Cinnamon sticks/Pattai
2
Cardamom/Elachi
2
Cloves
4
Bay leaves
2
Preparation Time: 15 minutes
Cooking Time: 30 minutes
Serves: 4-6

Method
Cut, clean and wash the chicken thoroughly. I have used chicken with bone, you can use boneless also, but with the bone it will be very tasty.

Dry roast the ingredients under “roast and grind” until nice aroma arises. Let it cool completely and grind it in the mixer to powder.


Heat oil in a kadai, add onions, salt and fry until they turn golden brown colour.


Add ginger & garlic paste and sauté until the raw smell vanishes.


Now add the tomatoes and fry until they become soft and mushy.


Add the washed chicken and mix really well, mix and cook until the chicken changes color from pink to white.


Add the turmeric powder and mix well. Now add the red chilli powder, ground masala powder, dry ginger powder, salt and mix thoroughly. Cover and cook for about 5 minutes.


Open the lid, give a good stir, add about 1 cup of water and mix well.


Cover and cook for another 10-12 minutes or until the chicken is fully cooked. Add the chopped cilantro and stir well.


The consistency of the chicken masala can be adjusted according to your requirement.


Serve this delicious Chicken Masala with white rice or chapathi, rotis, naans or any bread varieties.
