Vendakkai Pachadi/Okra Pachadi/Ladys Finger Pachadi

Pachadi is yet another common side dish prepared in South India. Now that summer is to start, serving different types of pachadi is the right way to beat the heat. I am just crazy about vendakkais/okra, I love them to the core. When the okra is cooked and mixed with yogurt, they just taste divine. Do try it friends, you will love it. Here’s how to make Vendakkai/Okra Pachadi with step by step photos…


Ingredients

Vendakkai/Okra
½ kg
Yogurt/Curd
1 cup
Red chilli powder/Sambar powder
1 tsp [adjust to taste]
Turmeric powder
¼ tsp
Salt
As needed

For Tempering

Oil
2 tsp
Mustard seeds/Kadugu
½ tsp
Cumin seeds/Jeeragam
½ tsp
Urad dal
½ tsp
Dry red chillies
2-3
Curry leaves
8-10
Asafoetida/Perungayam

Preparation time: 10 minutes      
Cooking time: 20 mintues
Serves: 4-6

Method

Wash and pat dry the vendakkai/okra. Cut the head and tail of the okras, then cut them thin round slices.

Heat oil in a kadai, splutter mustard seeds, add the cumin seeds, urad dal, dry red chillies, curry leaves, asafoetida  and saute for about a minute.


Now add the okra/vendakkai, salt and fry for about 6-8 minutes or until cooked and not sticky.


Add the red chilli powder, turmeric powder and mix thoroughly. Fry for another 3-5 minutes until all the raw smell vanishes and then switch off the stove.


Transfer the okra to a bowl and let it cool. Now add the yogurt/curd and mix well.


Delicious, healthy and cooling vendakkai pachadi is ready to be enjoyed. Serve it along with steamed rice, vatha kuzhambu, and karunai kizhangu fry.
