Varagarisi Upma/Kodo Millet Upma/Varagu Upma/Varagu Arisi Upma Recipe

I have been thinking about sharing with you all, millet recipes from my kitchen, but I was not blogging for quite sometime due to various reasons. But today I have something very special for all of you, it's nothing but Varagu arisi upma. Varagu arisi is gluten-free and is excellent source of vitamins and minerals. It is rich in fiber and digestive friendly. Studies have shown varagu arisi helps in controlling blood sugar and cholesterol. It is packed with nutrients and is great energy source for all the age groups. I have made a very simple varagu arisi upma but you can add a twist to it by adding a bowl of vegetable to make vegetable varagu arisi upma. I will post that recipe also very soon. Here’s how to make Varagarisi Upma with step by step photos…
Ingredients
Varagarisi/Kodo Millet/Varagu
1 cup
Onion
1 big finely chopped
Green chillies
4-5 slit length wise
Ginger grated
1 tsp
Coconut [grated]
2 tbsp [optional]
Salt
To taste

For Tempering    
Mustard Seeds/Kadugu
½ tsp
Cumin/Jeeragam
½ tsp
Chana dal/Kadalai Paruppu
2 tbsp
Asafoetida/Perungayam
One pinch
Curry leaves
10-12
Oil
1 ½ tbsp
Preparation Time: 10 minutes
Cooking Time: 25-30 minutes

Method

Clean the varagarisi thoroughly to get rid of any foreign particles. Now wash it two to three times in clear water. Drain the water and keep it aside.

Heat oil in a kadai/pan, splutter mustard seeds, add cumin seeds, kadalai paruppu/chana dal, curry leaves, asafoetida and fry for few seconds.

Now add finely chopped onions, green chillies, grated ginger and saute till the onions turn transparent.

Now add about 3  cups of water and bring it to boil.

Once the water starts to boil add salt, varagarisi and mix thoroughly.

Cover and cook the varagarisi in low flame for about 10 minutes. Stir in between. Wait until all the water is completely absorbed. By this time varagarisi will be completely cooked.

Add the grated coconut and mix well.

Yes, healthy and delicious Varagarisi upma is ready to be enjoyed.
