Eral Vaada/Prawn Vaada is a very famous street side food found in Nagore, Tamil Nadu India. It is a super tempting and delicious evening snack or breakfast recipe made with prawns and rice flour. Ingredients

Raw rice/Pacha Arisi

2 cups

Prawn/Shrimps [Small Variety

250 gms

Shallots/Sambar Vengayam

Green Chillies

6-7

Red Chilli Powder

½ tsp

Turmeric Powder

¼ tsp

Salt

As needed

Curry Leaves/Karuvepillai

10-12 finely chopped

Oil

For frying Vaada

Method

Preparing the Rice Flour and making the dough

Raw Rice/Paccha Arisi

Wash the raw rice thoroughly with water 2-3 times and drain the water. Add fresh water and soak for about 2 hours.

Drain the water completely. Spread a clean cotton cloth [two layers] on a clean surface or on a table.

Spread the washed rice on the cloth and let it dry in shade inside the house. The rice should be slightly damp but not wet.

When the rice is moist enough, add it to the mixer and grind it to fine powder.

After grinding it to a fine powder, sieve it well.

Now the rice flour is ready.

Now add the rice flour to a bowl, add the required amount of salt to it and mix well.

Add water little by little and mix the rice flour to make a soft dough.

Preparing the onions to be added to the dough

Peel about 25 shallots/sambar vengayam, wash 7-8 green chillies and keep it ready.

Chop the shallots to small round pieces. Slit and cut the chillies to fine pieces and keep them ready.

Heat about 2 tsp of oil in a kadai, add the chopped shallots, green chillies, one pinch of salt and saute until they turn just translucent. Now switch off the stove. [Do not saute for very long time]. Let it cool down.

Now add the sautéed onion, green chillies to the rice flour dough.

Mix everything really well, until thoroughly combined.

The basic dough for the vaada is ready, it needs to be fermented. Close it and keep it aside for 8 hours or overnight.


Cooking the Prawns after the dough is fermented and ready:

Wash and Clean the prawns/eral without any mud for at least 3 times and drain the water. Add ½ tsp of turmeric powder to the washed prawns/eral, mix really well and then wash it one more time.

Devein the prawns and wash it one more time and keep it ready.

Add the prawns to a kadai/pan, add red chilli powder, turmeric powder, needed salt and mix well.


Cook the prawns on low medium flame. The prawns will release some water, sprinkle little more water and cook the prawns.

Wait for all the water to evaporate and the prawns will be ready by now. Switch off the stove.

Preparing the Vaada

Take the fermented rice flour dough, add finely chopped curry leaves to it and mix well. The onions would have released some water and the dough will be even more soft and pliable.

Make small balls, pat them to make patties with a hole in the center.

Now insert the cooked prawns as shown in the picture.

Frying Vaadas

Heat oil in a kadai. When it is hot enough, slide the patties/Vaada to the oil gently.

Flip and cook the vaadas on both sides until they turn to golden color.

Drain it from oil and transfer to bowl lined with tissue paper.

Similarly fry all the Prawn/Shrimp/Eral Vaadas.
