Brinjal Pan Fried/Fried Eggplant/Kathrikkai Varuval

This brinjal pan fry was passed on by my friend years back. After a very long time I am doing this egg plant fry, sometimes we have to refresh our memories  to do certain things and my blog is helping me with this.

Here’s how to make Pan Fried Brinjal with step by step photos…



Ingredients

Eggplant/Big Brinjal
1
Ginger & Garlic paste
½ tsp
Red chilli powder
1 tsp
Coriander powder
2 tsp
Turmeric powder
¼ tsp
Cumin powder
¼ tsp
Garam masala powder
½ tsp
Corn flour
½ tsp
Lemon juice
2 tsp
Salt
As needed
Oil
For frying the egg plants

Method

Wash the brinjal and cut it into round slices, it should not be too thick nor too thin and keep it aside.

Mix all the ingredients mentioned above except brinjal and salt in bowl with little water to make the masala.

Now dip the egg plant pieces in the mixed masala on both the sides and marinate for 15 -20 min.


Heat a non-stick tawa, add some oil and arrange 4 or 5 pieces of brinjal and cook in a medium flame. Cook on both sides equally until golden brown.


Yummy and delicious pan fried eggplant/brinjal is ready to enjoyed. Serve it as side dish for rice.
