Today, I am going to share a super tempting, healthy and delectable Soya Chunks Fried Rice. Soya Chunks is rich in protein and is great alternative for vegetarians. This Soya chunks fried rice is a balanced meal which is packed with protein, vitamins & minerals. This fried rice is an ideal lunch box recipe or even for family function gatherings. Here’s how to make Soya Chunks Fried Rice with step by step photos…

Ingredients

Basmathi Rice

2 cups

Onion

1 finely chopped

Garlic Cloves

3-4 finely chopped

Green Chillies

4-5 slit & cut

Carrot

2 finely chopped

Green Beans

12 finely chopped

Capsicum/BellPepper

1 finely chopped

Red Chilli Sauce

1.5 tbsp

Soya Sauce

2 tbsp

Vinegar

2 tbsp

Black Pepper Powder

1 tsp

Cilantro/Coriander leaves

2 tbsp

Oil

3 tbsp

Salt

As needed

 For Marinating

Soya Chunks/Meal Maker

100 g

Ginger & Garlic Paste

1 tbsp

Green Chilli Sauce or Green Chilli Paste    

1 tsp

Method

Wash the basmati rice thoroughly with water 2-3 times and drain the water. Add fresh water and soak the rice for about 30 minutes.

Drain the water from the rice, add it to pressure cooker, add 3 cups of water, 1 tsp of oil and pressure cook for 1 whistle. Wait for the steam to release all by itself, fluff it up and keep it ready.

Cooking Soya Chunks/Meal Maker

Boil about 4 cups water, with 1 tsp of salt.

Let it come to rolling boil, now add the soya chunks to it.

Let the meal maker/soya chunks cook for about 5-6 minutes or until it is cooked and switch off the stove.

Drain the water and filter out the soya chunks. Run it under cold water and let it cool down.

Squeeze out the excess water, the cooked soya chunks is ready.

Marinating the Soya Chunks

Add ginger garlic paste, salt and green chilli sauce to the cooked soya chunks.

Mix everything really well and let it sit for 30 minutes.

Fired Rice Preparation

Heat 3 tbsp of oil in a kadai/pan, add chopped garlic and sauté for about 20-30 seconds.

Add finely chopped onions and sauté until they turn translucent.

Next add the slit green chillies and sauté well for 20-30 seconds.

Add the finely chopped carrots, beans, little salt and mix really well.

Sauté the vegetables on high flame for about 2-3 minutes.

At this stage add the finely chopped capsicum/bell pepper and sauté well for about a minute.

Now add the marinated soya chunks and mix everything really well.


Sauté the soya chunks for about a minute or until the raw smell of the ginger & garlic paste.

Add red chilli sauce, soya sauce, vinegar to the soya chunks.

Mix everything really well and sauté well for another minute or until well combined.

Now add the cooked rice and mix really well.

Add 1 tsp of black pepper powder and mix really well unitl everything is well combined.

Finally add finely chopped coriander leaves/cilantro or finely chopped spring onions to the fried rice and switch off the stove.

Delicious, healthy and tempting Soya Chunks Fried Rice is ready to be enjoyed. Serve it hot with tomato ketchup or Egg Manchurian or Cabbage Manchurian.
