Kara Sev/Easy Diwali Snacks

Kara Sev is a traditional South Indian snack prepared during Diwali and also during other times as crispy and crunchy evening snacks. “Kara Sev” means “Spicy Sev”, you can very well adjust the amount of spice according to your taste buds, but the measurements I have given here will suite all age groups. Kara sev is usually made with kara sev karandi (big ladle with holes), but since I don’t have one of those I have used the regular murukku press. Kara sev is made with besan flour, rice flour and other spices perfectly blended together. The addition of freshly ground black pepper corns gives extraordinary taste to these Kara sev.

Manathakkali Keerai Thanni Saru Recipe/மணத்தக்காளி கீரை தண்ணி சாறு/Black Nightshade Soup with Coconut Milk/Solanum Nigrum Soup/Makoi Soup with Coconut Milk-Keeraithanni Recipe with Video in both English & Tamil

Manathakkali keerai/Black nightshade has numerous medicinal properties. It is rich in antioxidants, iron, vitamins, minerals and loaded with calcium. The amount of phosphorous present in it helps in the growth and development of brain nerves.  Manathakkkali Keerai is an excellent cure for mouth ulcers and stomach ulcers. In Tamil medicine it said that you should consume the manathakkali keerai raw leaves [7-8] in the morning in empty stomach. This is an excellent remedy and cure for stomach and mouth ulcers. This manathakkali keerai thanni, prepared with coconut milk is my grandma’s recipe. After I got married, when I made this recipe, my husband and my in-laws were surprised, it was really new to them and they loved it. Anyway friends try out this keerai thanni and post your comments. Midhukku Vathal Kuzhambu/Vathakuzhambu with Midhukku Vathal

Midhukku Vathal is a very famous and popular vathal made in the district of Thirunelveli and Karaikudi in TamilNadu. Midhukku vathal is made from a small vegetable that belongs to cucumber family which looks similar to kovaikkai. It is called as wild melon in English.  It is very good to include midhukku vathal in our diet because it reduces bad cholesterol, improves digestion and liver function, it also reduces unwanted water retention and helps in de-worming. This vegetable is cut into small pieces, dried in sunlight and then soaked in curd overnight along with salt. During the day it is sun dried and soaked in remaining curd during night till it fully absorbs the curd and becomes crisp and dry. This dried vathal can be stored for about a year. This midhukku vathal can be deep fried in oil and had as side dish along with all rice varieties or can be added in kuzhambu to make vatha kuzhambu. Milagu Kuzhambu/Pepper Kuzhambu

Milagu kuzhambu/Pepper Kuzhambu is a traditional South Indian kuzhambu made by blending black pepper corns with other spices and ingredients. I have been making lot of dishes with pepper now, the reason is that though spring started officially in March, it is still cold and flowers are blooming only now(May). UK has faced a very bad winter after 50 years, and it is now raining and hail falling down, the weather is really pathetic. The perfect lunch for us I decided was milagu kuzhambu/Pepper kuzhambu and potato roast, an apt lunch for cold and rainy days.

Milagu kuzhambu has lots of medicinal values, it helps us when we have cold and cough. The pepper helps in getting rid of the phlegm and congestion. It also helps in digestion and gastric problems. Since we add lots of curry leaves this kuzhambu is also rich in iron. This is my mom’s special milagu kuzhambu.

You can use sunflower oil as well, but gingerly oil is excellent for this kind of kuzhambu's gives rich aroma and very good taste.
