Aloo
Jeera is a simple. yet a very flavourful and delectable side dish for potato

makes a wholesome meal. Cumin seeds is a very common ingredient in each and
every Indian kitchen. Apart from the unique flavour and taste cumin seeds have
numerous health benefits. They have good amount of iron to fight anemia, so
adding cumin seeds in our everyday cooking improves the iron level in our

All the

Though
I love krispy kerme and dunkin doughnuts, I always have special place for the
mini doughnuts in my heart especially when I go to fairs and market place. The

Andalusian Gazpacho/Spanish Chilled Tomato Soup
For
this month’s IFC, Sharanya of Just Not The Cakes challenged us with exotic
array of Andalusian cuisine from Spain. Andalusia is one of the most populous
and second largest communites in Spain, stretching south from sunny cities
Cordoba and Seville all the way to Atlantic ocean and the Mediterranean sea.
The name “Andalusia” was derived from the Arabic word “Al – Andalus”. Andalusia
boasts many delicious foods offering travellers a chance to stimulate their
palette while exploring.
You
don’t have to be in Spain to enjoy an exotic Spanish soup, do you? So, I chose
to do the Gazpacho and share it with you all. Gazpacho is a tomato based
vegetable soup, traditionally served cold. It is a very healthy soup made with
fresh vegetables and consumed during the summer months to beat the heat.
Gazpacho is made with stale bread, tomatoes, cucumber, onions, capsicum,
vinegar, olive oil and salt. The best part of gazpacho is, we can prepare this
soup previous day and serve it either as an appetizer or as a main course with
toasted bread. How hard can it be?

I love
to eat pasta, but I am not a cheese person. So most of the times, I try to
avoid as much cheese as possible, but my kids love cheese to the core. Today I
made creamy, healthy, tangy and flavorful pasta without adding cheese, it was
really a winner. The addition of milk made it creamy, the addition of spinach
made it healthy, addition of sun dried tomatoes gave some tanginess and the

Badam
pisin or Almond gum is an edible gum collected from badam/almond trees. Badam
tree bark secretes the gum and it gets dried up, which is later collected and
used for medicinal purposes. They look like little rocks which are white in
colour and an excellent natural body coolant. The famous drink of Tamil Nadu - Jigarthanda, Rose
milk etc are prepared by adding Nannari sarbat to the badam pisin. The badam
pisin is soaked overnight in water which then becomes like jelly; this jelly
can then be used along with sarbats. Badam Pisin is a natural jelly which can be consumed by everyone to beat
the heat and keep the body cool. This is badam pisin milk is an easy and simple
home remedy during the hot summer days. My grandma used to give this for us and

Thirunelveli district of Tamil Nadu. It is a very healthy drink, prepared with milk and
palm sugar. This Ullundhu pal is a must for girls and growing children as

about the panam/panang kalakandu which is used in preparing this milk. Panang

Dill leaves vadai is a very aromatic, delicate tasting and flavourful vada. Before going into the recipe I would like to share a few things about Dill leaves. Dill is
native to Mediterranean and East European regions. Dill leaves are feathery, fern
like and dark green in colour. Fresh and dried dill leaves are widely used as
herbs in Russia, Germany, Greece, Poland, Norway and many other countries. In
India dill is known as shepu in Marathi, savaa in Hindi, soa in Punjabi,
sadhakuppu in Tamil, soa-kura in Telugu, sabbasige soppu in Kannada and
chathakuppa in Malayalam. Dill is a unique plant, because both its leaves and
seeds are used as seasoning. It is rich in vitamin A, C, B6, folates,
riboflavin, calcium, iron and other important minerals. Dill has an essential
oil called Eugenol, which has been in therapeutic use as local anaesthetic and antiseptic.
Eugenol also has been found to reduce sugar levels in diabetics. Dill seeds
have been used in traditional medicines for digestion, as disinfectant, for
more milk production in nursing mothers and to cure neurological symptoms like

Ganoush is a dish made out of Eggplant/Aubergine/Kathrikkai, along with tahini paste, garlic, lemon juice and olive oil. The Eggplant/Aubergine is baked or
broiled over an open flame and the skin is peeled out. This is done to make the
Eggplant pulp soft and to get a smoky taste. It is a very common and popular
dip eaten along with kuboos/pita bread in the Middle East. I have had this Baba
Ganoush several times in Lebanese restaurants when I used to live in USA. Another
very similar and authentic dip/chutney made in Tamil Nadu [South India] is the
Sutta Kathrikkai Chutney which also has the smoky taste along with Indian

Today I
am posting a very healthy, flavourful and delectable Kothamalli Thogaiyal. I
love this thogaiyal, because of its course texture, slightly tangy and spicy
taste and packed with flavours. Kothamalli thogaiyal does not get spoilt very
easily for about 5-6 days when handled properly with clean spoon. It is rich in
vitmains, minerals and packed with fiber. When making either kothamalli chutney
or kothamalli thogaiyal, don’t just use the leaves, use the tender part of the
stem also, it is loaded with fiber and helps in digestion. Before going into

Karamani/Black Eyed Beans Patties/Tikkis
Yesterday
I posted a very healthy and delicious Black Eyed Bean Soup, I had about a cup
of cooked beans left. So I made some healthy patties as evening snacks for my
kids. It is so easy, quick and super healthy, you can have them for evening snacks
or toast some bread slices, keep the patties in the middle along with a cheese
slice and have them as sandwiches.

Homemade Tahini Paste/Sesame Seeds Paste-Middle Eastern Delight
Tahini
is a paste made by grinding roasted sesame seeds along with olive oil, used in
North Africa, Greece, Turkish and Middle Eastern cuisine. Tahini plays a vital
role in Middle Eastern recipes and is a foundation for many recipes likehummus, baba ghanoush, halva etc and also served as a dip on its own [Wikipedia].
Tahini paste can be purchased from shops, but can be made at home in a jiffy. I
personally love Middle Eastern dishes and prepare hummus, falafel, baba ghanoush
etc at home. Tahini is an excellent source of omega-3, omega-6 fatty acids and
is also rich in copper and manganese. Tahini has relatively high levels of
calcium and protein and is perfectly suitable for vegetarian and vegan diets.

Mullangi Chutney/Radish Chutney/Mooli Chutney
Radish
is an edible root vegetable, with numerous health benefits. Radish is a very
common vegetable consumed around the world because it grows really fast. It is
available in different size and shapes in white and red colours depending on
the climatic conditions in which it grows. It has very less calories, high
water content, rich in vitamin C and fiber. They are also rich in wide range of
essential vitamins and minerals like potassium, folate, manganese, copper,
magnesium, calcium, vitamin B6 etc. Radishes
can be either cooked or can be had raw in salads. I usually make radish sambar,

Peerkangai Thol Thogaiyal/Ridge gourd Peel Chutney
My
previous post was Peerkangai/Ridge gourd kootu, so I did not throw away the
peel rather made my favourite peerkangai thol thogaiyal. It is rich is fiber
and very delicious and traditional thogaiyal of Tamil Nadu. I wrote a few
benefits about ridge gourd/peerkangai in my previous post and I want to share a
few more here as well. Peerkangai helps in lowering the blood and urine sugar
level, not only that it helps to purify, restore and nourish liver and also
helps to cure skin diseases like eczema, psoriasis etc. When the ridge gourd is allowed to mature and
dry in the vine, it is later harvested like a sponge. This sponge is one great
natural exfoliating product used for bathing to remove dead skin cells and thereby
leaving the skin soft and conditioned. I think with this note I will move on

vadai is yet another delectable and my favourite evening snack. I love it so
much I can finish off one whole plate in no time. The best part of thayir/curd
vadai is, though the vadai’s are fried in oil, as they are soaked in water for
about a minute and when squeezing out the water all most all the oil also comes out of the
vadai and they become very soft. All the goodness of yogurt/thayir, protein
from urad dal, added vegetables makes this a delicious evening
