Pineapple Kadhi

Ok guys, now that I had some pineapple left, I wanted to do something new. That is when I came across Pineapple Kadhi by Vahchef. I found it quite interesting because usually kadhi’s are made with yogurt, but here alternatively coconut milk is used. So I gave it a shot and it came out wonderful. It is one striking combination of coconut milk, with spices and pineapple making it a very big hit.

Here’s how to make it with step by step photos…


Ingredients

Pineapple
¾ cup finely chopped
Coconut milk
1 cup
Mustard seeds
¼ tsp
Cumin seeds
¼ tsp
Cloves
2
Green chillies
2 finely chopped or crushed
Red chilli powder
½ tsp
Turmeric powder
¼ tsp
Besan flour (kadalai maavu)
2 tsp mixed in ¼ cup water (thin consistency)
Curry leaves
5
Oil
1 tsp
Sugar
1 tbsp
Salt
As needed

Method
In a kadai, heat oil, add mustard seeds after it splutters, add cumin seeds, cloves and curry leaves. Now add the green chillies and sauté for 10 secs.


Add the pineapple pieces and sauté for 1 min, followed by red chilli powder, turmeric powder and sauté for about 3 mins or until the raw smell goes off.


Add the coconut milk, salt and sugar and let it boil for about 5 min. Start adding the besan flour mixed in water slowly to the kadai. Keep stirring, let it boil for another 5 mins.


Yummy “Pineapple Kadhi” is ready to be served.


You can adjust the chilli powder and sugar according to your needs.
