Kaju Paneer Curry/Kaju Paneer Masala/Cashew nut Paneer Masala/முந்திரி பருப்பு பன்னீர் மசாலா/How to make Kaju Paneer Masala with step by step photos and video

Here’s how to make Kaju Paneer with step by step photos…

Ingredients
Paneer
200 gms
Onion
1 finely chopped
Tomatoes
3 finely chopped
Ginger & Garlic Paste
1 tsp
Cashew Nuts
2 tbsp for frying
Cashew Nuts
8 for grinding
Red Chilli Powder
1 tsp
Coriander Powder
1.5 tsp
Turmeric Powder
¼ tsp
½ tsp
½ tsp
Kasoori Methi/Dry Methi Leaves
1 tsp
Coriander Leaves/Kothamalli
2 tbsp finely chopped
Salt
As needed
Oil/Butter
2 tbsp

For Tempering
Oil/Butter
 1tsp
Bay Leaf
1 or 2
Cardamom/Elachi
2
Cloves
4
Cumin Seeds/Jeeragam
1 tsp

Preparation
Chop the paneer to cubes and keep it ready.

Add the chopped tomatoes to the mixer and grind it to a puree and keep it aside.

Add 8-9 whole cashew nuts to the mixer and grind it to a paste.

Method
Heat 2 tbsp of oil/butter in a pan, add about 2 tbsp of cashew nuts and fry to golden brown color and transfer it to a plate.

To the same pan add the cut paneer pieces, fry for about a minute and then transfer it to a plate.

Add 1 tsp of butter to the same pan, add bay leaf/birnji ilia, elachis, cloves and 1 tsp of cumin seeds.

Add finely chopped onions, little salt and saute to golden color.

Add 1 tsp of ginger & garlic paste and saute well until raw smell vanishes.

Now add red chilli powder, coriander powder, turmeric powder, garam masala powder, cumin powder, salt and mix everything well for about a minute.

At this stage add the tomato puree, along with 1.5 cups of water.

Mix really well and let it come to a boil, cover and cook for about 10 minutes or until the oil separates out.

Open the lid, add the cashew paste, ¼ cup of water and mix really well.

Let it boil until the oil separates out. Add the fried paneer pieces, mix gently until the masala is evenly coated.

Now add the fried cashew nuts, cover and simmer for about 3 minutes.

Add the crushed methi leaves, 2 tbsp of chopped coriander leaves, mix well and switch off the stove.

Suggestions:
Adjust the consistency according to your need.
I have not added fresh cream, you add fresh cream before switching off the stove for more rich and creamy taste.
Adjust the spice and salt level according to your family needs.
